I think he just likes working in the kitchen. While other chefs do some of the planning, writing etc at their desks, he does it in the kitchen. At least we often see him sit there working, not necessarily always cooking. And IDK about the different tasks everyone has, maybe Chris does more recipe development while the others do more writing etc. :)

This isn't a formal layer cake, though. It's not gonna work the same way as the well-put-together ones that Claire showed in her series (but those are amazing cakes!). My father who is 88 was just reminiscing about Blackout cake from Ebinger's! I will have to make this cake for him. As a kid he felt really important when it was his turn to scan the skies over Staten Island with binoculars for German planes. And he remembers going to the pier in NY harbor in 1938 to meet his aunt and her family, who were extremely fortunate to escape from their Jewish village a week after Kristallnacht. I don't think Ebinger's ever released their recipe which was made with chocolate sauce, but this version seems appropriately decadent!
