★ INGREDIENTS:
Serves 4
For the broth:
⅔ lb veal knee (including cartilage and sinew)
⅔ lb beef ribs
⅔ lb loin bones
2 sliced veal shanks (only bones with marrow)
1¾ oz kidney fat
¼ lb potato
1¾ oz carrot
1¾ oz celery
¼ lb onion
¾ cup white wine
14 peppercorns
1 cinnamon stick
1 pinch nutmeg powder
2 bay leaves
¼ oz sage
⅔ tsp table salt
2 quarts water
For the risotto:
1⅓ cups Sant’Andrea (or Carnaroli) rice
½ tsp saffron
¼ lb onion
⅔ tsp table salt
¾ cup white wine
1 cup grated Grana Padano cheese
½ cup cold butter
