If you want the perfect baked potato recipe you are in the right place! Today I will reveal some simple tricks to have crispy baked potatoes outside and soft inside, let's start!
INGREDIENTS FOR 4 PEOPLE
1 kg of potatoes
10 g of baking soda
2 lt of water
2 tablespoons of extra virgin olive oil
4-5 tablespoons of sunflower oil
Salt to taste
1 clove of garlic
1 sprig of rosemary
Bring a large pot with 2 liters of water to the fire and wait for it to boil. In the meantime, peel the potatoes, put them in a colander and rinse them well under cold running water. Cut the potatoes into chunks trying to make them of similar size so as to cook them evenly, then put them in a container and rinse them well until the water is clear. If the water boils put the baking soda, add the salt, put the potatoes and since the water returns to boiling, boil for 5 minutes. In a large container put very cold water and if you have them available, add ice cubes. After 5 minutes, transfer the potatoes with a skimmer to the container with cold water, do this quickly and once you have transferred all the potatoes, drain them again and pass them under cold water. Once drained well, dry the potatoes by dabbing them with a dry cloth, then transfer them to a container, add 4-5 tablespoons of sunflower oil, mix well and then put them in the pan making sure that all of them touch the bottom of the pan. Put all the potatoes in the oven preheated well (i.e. you have to turn it on at 250 ° C at least 20 minutes before!) And cook for 25-30 minutes on the lower part of the oven placing the pan on the grill (do not confuse it with the dripping pan, the grill is the silver one and is perforated). After 25 or 30 minutes (time may vary depending on the oven), turn the potatoes one by one, bake again and cook for another 10-15 minutes. At the end of cooking if you want, pass them under the grill for 5 minutes, they will be perfect, very crispy on the outside and very soft inside, as if there was mashed potatoes.
