I’m sorry I’m not sure if I missing it but how much confectionery sugar and how much meringue do you use? It’s the only thing I can’t seem to find.

These are absolutely beautiful and elegant. Do you have any idea if you can make the dough a few days in advance, refrigerate, and then do a big cooking /decorating day a couple of days before Christmas? I’m just trying to figure out how to work making holiday cookies into the rush of Christmas meal cooking. I know gluten free baking goes stale more quickly, at least in my experience. Thanks!
