Using the Jean Jacques Butterfly Sweeps to open up the Meat Hook, which is a variation of the Rubber Guard that I use as one of my primary attacks from Butterfly Guard.
As always, the Triangle Choke should really be your #1 attack from all variations of Rubber Guard.

What's stopping them from pulling out while you transition from over under to meathook?

I had the same thought, but after giving it a try, it's pretty hard to pull out while your weight is forward from the sweep attempt If you find guys are pulling out anyway, you could always leave the overhook in and go to a more clamp guard style position first

The arm gets trapped on the other side by the clamping leg. Off course if you have the best timing in the world and know it's coming, then this split second while the clamp is being put on is when you should go.
