Can't beat my mum's but close enough :-) It's an awesome curry, I can never get enough of it! It's creamy, it's salty, it's a little sweet and sour and you'll want more rice to soak up this delicious sauce! 2,4,6,8 bog in don't wait and polish your plate!
Ingredients

-300 g Salted Pangasius (or your choice but test for saltiness)
-30 g dried red chillies
-2 large red onions (or 12 shallots)
-5 cloves garlic
-2 stalks lemon grass
-2 sprigs curry leaves
-1 small piece belacan (use only if fish does not have a strong
flavour)
-3 tbs fish curry powder
-20 snake beans
-1 medium brinjal (egg plant)
-500 g chunky pineapple pieces
-10 small pieces tau pok (fried bean curd)
-20 small prawns (or 10 large)
-4 cups thin coconut milk
-1/2 cup thick coconut milk
-3 or 4 tbs of tamarind paste (watered down)
