Can't beat my mum's but close enough :-) It's an awesome curry, I can never get enough of it! It's creamy, it's salty, it's a little sweet and sour and you'll want more rice to soak up this delicious sauce! 2,4,6,8 bog in don't wait and polish your plate!
Ingredients
***********
-300 g Salted Pangasius (or your choice but test for saltiness)
-30 g dried red chillies
-2 large red onions (or 12 shallots)
-5 cloves garlic
-2 stalks lemon grass
-2 sprigs curry leaves
-1 small piece belacan (use only if fish does not have a strong
flavour)
-3 tbs fish curry powder
-20 snake beans
-1 medium brinjal (egg plant)
-500 g chunky pineapple pieces
-10 small pieces tau pok (fried bean curd)
-20 small prawns (or 10 large)
-4 cups thin coconut milk
-1/2 cup thick coconut milk
-3 or 4 tbs of tamarind paste (watered down)

What is the purpose of frying the salted fish first?

It imparts a distinct flavor to the dish which salt can't do. It's an acquired taste :-) Thanks for watching :-)

Oops! Sorry I didn't see the word 'frying'. Same as you would brown pieces of meat before you make a stew or casserole I guess. My reason for frying the fish first was to brown, keep them slightly more intact and to release flavors. :-)

Dalam satu, isi ikan kering pasti ambil naik, kalau tidak kuah kamu akan jadi lebih masin.. Ingat ya, masa untuk hidang di atas meja! ( dalam 4.jam ,isi ikan kering akan jadi lagi masin ya)..

Tak ambil naik sebab ikan masin itu saya sudah test makan...kurang masin tak saperti ikan kurau masin yang saya guna bila tinggal di Penang dulu. Kari ini saya masak bila duduk di luar negeri..bahan bahan authentic susah cari.

Hai Bake Cook.. Recipe kamu sungguh bagus dan lengkap, tetapi masa kamu tumis tak pecah minyak, bawang besar sekurang 4 biji, serbuk kujid sedikit, Santan air satu mangkik dan Santan pekat 200 gm ,air filter 1 mangkuk, lihat video kamu, kuah ikan kering tidak cukup kerana bahan yg kamu masak banyak yah.. Ok gd job.. thank u!
