Easy and universal Sausage making process . Home made sausages .
Ingredients for 3 LB of Pork Shoulder / Boston butt
Salt - 1/2 Tbsp or more depending on taste
Black ground Pepper - 1/2 Tbsp or more depending on taste
Garlic powder - 1 Tsp or substitute with real garlic accordingly
Paprika - 1 Tbsp
Chili powder - 1 Tbsp
Other herbs ... add what you like.
For "hotness" Red crushed pepper flaked 1/2 Tbsp or what you like
Mayo - 1/3 to 1/2 cup
Casings - from store , wash before stuffing - they are over salted.

best example - Cold Smoked Pork Tenderloin , Cold Smoked Pork Belly. I will be getting in to kielbasa style hot smoked , salami style dried cold smoked and other types of things , usually - time is an issue. I did not touch hot smoked things at all yet - pulled pork , beef brisket. So i do have plan (for some time already) - i just need to commit a little more. :)

Nice video , which blender are u using , or which meat blender is good for big amount of meat , if want to blend 10 kg of meat every day , I will appreciate your recommendations

you need better than that (kitchen aid). please look at sausagemaker.com they have more pro equipment. 10 kg a day - you need something reliable.

based on the salt amount could your spice mix be for 1lb ???

i do all things in % (most of time) - you could calculate % of LB ... my scale has ounces so it is some funky math - that's why i do like to do in kilograms 1 kg =1000 gr easy ... so 1 LB = 16 Oz and so on ...
