Scottish Beef Stew | My Favourite Scottish Recipe EVER! | Perfect For Burns Night

Fall apart beef cooked in the oven or the slow cooker - this Scottish beef stew is my favourite Scottish recipe and perfect recipe for Burns night - or any other night!

Ingredients:
2 tbsp vegetable oil
1 kg (2.2lb) Aberdeen Angus braising/stewing beef chopped into bite-size chunks
2 tbsp plain all purpose flour mixed with 1/4 tsp each of salt and pepper
2 large onions peeled and chopped
3 cloves garlic peeled and crushed
2 tbsp red currant jelly or cranberry sauce
500 ml (2 cups + 1 tbsp) red wine
2 large carrots peeled and chopped
2 medium potatoes peeled and chopped
1/2 small swede peeled and chopped
700 ml (3 cups minus 1 tbsp) beef stock water plus 2 stock cubes is fine
2 tbsp tomato puree
1 tbsp Worcestershire sauce
3 bay leaves
2 tsp dark brown sugar
1/2 tsp salt
1/2 tsp crushed black pepper
To Serve:
Fresh parsley and thyme
Chunks of fresh bread

Being American, I had to look up 'Swede' to find out that it was what we call a rutabaga. And I used to work in a restaurant kitchen.

Yup! If your source didn't tell you, rutabagas, or as my Southern dad called them, "rutabagies", were an important staple in northern Europe--I know, obvious! I did a quick look-up, the Scottish "neeps" refers to rutabaga, or new turnip. My Wisconsin Scandihouvian mom always put rutabagies in her beef stew and pot roast, never served them as a solo veg. I'm pretty sure she also threw in parsnips at times. Isn't it grand to have such food exchanges?

We do like to confuse things in Scotland. The auld yins (Older folks) here call them 'neeps' which would hint at those being turnips but Swedes tend to be more commonplace in the shops nowadays so that's what I tend use.

They sell rutabagas here in the Deep South year round, pretty much. We love them. They also serve them at most of our local restaurants as a side dish. We don't typically eat white turnips in the south, only rutebagas. They are one of my favorite veggies.

I follow you and I can’t believe I’ve only just seen this recipe. I had visitors the day after I made it. Omg it was amazing. Some nice touches in that. They couldn’t get over how luscious it was and said it was the best they’d ever tasted. I noticed reading some of the comments that some say it’s not Scottish. It’s a recognised fact that there are as many “original” recipes in all the counties, as well as England, Wales and Scotland as there are families and grannies. And tempers can flare over the different methods, ingredients and even names of dishes. It’s your dish. It’s delicious. Keep up the good work. That is one amazing Scottish Welsh English stews. My husband found out that he's mostly Scottish and has been learning Scottish Gaelic. I wanted to make him beef stew and when I searched this one popped up about 10 videos down and I was ecstatic! I am going to be making it for him and I couldnt be more excited!

I recently bought a couple of Nicky’s books, and chose this as my first attempt at her recipes. I used the slow cooker rather than the oven. Absolutely wonderful recipe. The dish is full of superb flavours and textures, with a sauce which is utterly delicious. Thanks, Nicky. Can’t wait to try more.

I made this tonight, and it’s probably the best stew I’ve ever had. I was a little unsure about the addition of the cranberry sauce, but it was amazing!! This will definitely be something I cook monthly. Don’t skip the fresh thyme sprinkled on top, it really ties it all together.

It’s been a difficult Winter/Spring that has included two heart stents; a right hip replacement; missing Christmas because of the Corona Virus; then upon release from hospital being rammed by a driver who ran a red light at 60 miles an hour while texting on her cell phone which resulted in my neck being broken and a bruised heart muscle. I discovered your amazing video/recipe on my iPad while in hospital and have made it several times upon my release. Today is the fourth time. This Scottish Beef Stew is my favorite of all beef stew recipes. It is a mighty prescriptive for broken necks, Corona Virus, heart surgery, having been skipped over by Santa, and it will also probably prevent abduction by space aliens. Seriously, this is a wonderful recipe. I couldn’t find a Swede so I tossed in a Norwegian, no, I’m sorry, I meant to say a turnip. It turned out great! I also ran out of currant jelly so I used Kentucky Mayhaw jam. That worked also. Thank you for your excellent recipes.

Nicky, This is making me drool. I will make this when feeling under-fed, harassed, bored and miserable. Don’t fancy dull wholesome food(salad) I want something a little bit ”tasty”. Nothing wrong with associating certain foods with pleasure!

Solid recipe (and great video). I recommend cooking half the meat at a time so that the pan is not crowded and it browns the meat nicely. It only takes an extra 8 minutes or so, but it's worth it.

I made this tonight, but didn't have a swede on hand. I chucked in a bit of celery I needed to use up and used white wine as that's what I had open, but this was still very, very good. I think with the red wine and swede it was supposed to have, this would be magical. I now have swede on my list for tomorrow's shopping! Thank you for this recipe - even my fussy children ate it! It has lifted my beef stew game enormously. 😃😋🥰

This is pretty much how I always make beef stew, except I've never added cranberry sauce before. Had no idea it was Scottish. Next time I make it I'm definitely going to try it with the cranberry sauce. Cheers from 🇨🇦

Beautiful recipe. The type of cooking, the aromas and the spices make me think that it is an ancient recipe, strengths of the fifteenth century, similar to others of the same period such as Peposo alla Fornacina (Renaissance Italy). This stew closes the mouth of those who make easy sarcasm about Scottish cuisine ^ __ ^

This is not like any stew I ate growing up in Scotland but that's a good thing! Meat cooked til it was dry, shrivelled and grey! It's only saving grace was I can now appreciate tasty meals like this.

There was a Scottish restaurant next to the shop I worked at as a teenager. They invited us for a feast for the Boss's birthday once. I really liked the haggis! (My great grandmother was Scottish).

My mother used to use red lentils in her stew in place of flour and she’d cook it and let it sit overnight and finish it the next day. I wish I knew exactly how to recreate that it’s sooooo good in the winter

Best beef Stew ever ,we put bacon lardons in with the beef at the start and also add mushrooms and dumplings of cause. Great recipe absolutely love it , thanks for sharing ✌️

Yum, I want to try this. I'm not sure what's so Scottish about it, though, besides the Aberdeen beef. It just looks like a really good beef stew to me, very similar to what I've seen from other countries. The ranchers in my area in the US raise Black Angus cattle.

Just found you and subscribed! I do have a couple of questions. I’m hoping the wine is a dry wine and not a sweet wine. I just popped my dish in the oven and tried a little taste. Is it supposed to be a little sweet and sour? Love the taste but just nervous I did it right.

Just made this. Absolutely delicious! Followed the recipe to the letter except I had no Worcestershire sauce (rookie error) so used marmite instead. Worked just fine.

me Nan (from Inverness) would be singing your praises if she was still with us, her version was alot more simplistic as me grandparents were not that well off, most of the veggies were grown in the back garden, loved her Stews and her Tatty Oggies, sure do miss those days.

2:44 in the oven for 3 to 4 hours..... at what temperature? For that time I suppose 140 C will suffice??? or?

Wonderful as always. Have you ever made a stew using ox heart and kidneys? It's made in a similar way and is as delicious as this looks. It's also relitively cheap and can be found in Morrisons.
