"White Guy" here also, I had a chance to try some of these things on a business trip to Szechuan district of China. I stayed one week, and really really loved it. everything was spicy, even what they served for breakfast. My only problem was not really knowing what I was eating and what it was called. translator would say something like, "Its made with pork" or Beef, etc. and give me the Chinese name, which frankly went in one ear and out the other. But thanks to this video, I have a better Idea of some of what I may have had. and what they are called.

I tried most of the sichuan food...I love them. They are most popular type of food in china. For entree, i think the fish is better than beef. I eat it several times when i go back to china during summer

I'm normally so afraid to try these dishes, but this is exactly why I love this channel!! I feel like I have such good advice in my back pocket that I can take with me. I'm actually super eager to go back and really enjoy the point of having an authentic restaurant in my neighborhood. The tofu and the squirrel fish dishes were a complete surprise! I'm still a little nervous about the beef tongue, but I trust you Mike♥~ No more rangoons for me!

What I learned when I was in China for a while was: Just eat what you are given and do never ever ask what you're eating. - If you're allergic just point that out in the beginning. There are just so many strange things (at least to the German me) that I wouldn't have eaten if I had known what it was when it was served. - Beef tongue was one of it. Tasted really good - but I never ate it again just because it is too strange to me (though; as long as I don't know it's tongue (or whatever) it's alright xD)

One of the reasons it's called squirrel fish is that the frying process makes the fish curl up like a squirrel's tail. That's the other reason for all the knife cuts in the fish - those cuts make the fish curl when it's fried.

hello mike sd, sichuan food is not a stranger for my home - my father is a head waiter in the new york late night restaurants which then most days were hunan cooking. the rise of the malay hot was from the nineties. we were more in ordering the appetizers from sichuan - think we were ordering chilled wine chicken i think is sichuan with scallion pancakes then, hot and sour soup (should try all restaurants) was not family style but what the kids ordered on their own, there is a chef special malay peppercorn pig ear, the hot oil wonton is always fun but not family table again, there is a pork rump dish that comes out not sliced that is important for my family table - not spicy too, the red carp with bean sauce think is a very hunan plate if like spice. but, the malay popular days is from the even younger than me kids - 80s / 90s born kids. if you feel like you taste hot and sour soup in your plate then it is szechuan. thanks mike strict :) elle for hot oil beef tendon (oy nom)

Thank youuu this seems SO delicious. I love how you say to us how to recognize if it's a good/typical restaurant, when you don't know all the non-visible code of the culture it's difficult to recognize proper restaurant. Great video again guys! I'm not a huge fan on spicy food, but I do like certain Szechuan dishes such as dan dan mian and hong you chao shou (I know, it's ironic). I always thought that dan dan mian was more of an entree (served hot) than an appetizer even though I've seen it as an appetizer in a couple of places. Is it usually served cold/as an appetizer in Szechuan? Will you guys be doing a video on Chinese desserts? You guys should also do a tutorial on how to hold and use chopsticks properly for those who don't know how to use them!
