I just made this today and for those of you with a gluten sensitivity like me you might want to know baking with organic einkorn flour gives me no issues. Einkorn flour is the original wheat, easier to digest than modern wheat, and it's never been hybridized. I made this quick bread using einkorn flour and followed the recipe as written, except for the coconut flakes on top because I couldn't find them in the store. Minor adjustment with extract, I used 3/4 teaspoon of vanilla extract and 3/4 teaspoon of coconut extract. This bread is delicious. This goes into my baking rotation.
I live in Trinidad and Tobago and this is very similar to our coconut sweet bread...except we add candied citrus peel and raisins to the mixture. Always great to eat👌👌

I just made this bread with high altitude adjustments because I live at 7,000 ft. in NM - the aroma in the house while it was baking was heavenly. Great recipe!
I just made your recipe and it's so good. Made my house smell wonderful too. I love coconut so I added 1/4 tspn coconut extract on top of the 1 1/5 tspn vanilla extract and it was just right for me. I totally agree that using unsweetened coconut milk and flakes was perfect. The bread has just the right amount of sweetness. Thank you so much for sharing it with us. It's also my first from scratch bread I've ever baked. Looking forward to more of your recipes.
Stephanie, I am always so enamored with your presentation and tips. Thank you for suggesting that we slice and use perchment paper between slices to freeze; that's a brilliant tip that will make it easier to slice quick breads and enjoy in more reasonable quantities than I might be enticed to do otherwise 😁

Yes! This looks very similar to West Indian coconut sweetbread! Stephanie; I know you live in Canada where there are a lot of West Indians living! And I bet this and perhaps some of your other recipes have that West Indian influence someway somehow! Yum-oh!

This video inspired me to make this today. It is simple to make and oh so good. Thanks Stephanie for posting the recipe. I also added slivered almonds, coconut extract and used coconut milk too. I wonder if adding crushed pineapple might be another good addition. More like a Hummingbird bread/Cake type bread. Deee-lish. Two thumbs up.
Yum. I love coconut and I think some kind of nuts, like toasted slivered almonds or maybe macadamia or pecans would be good. I love the idea of slicing it and putting parchment or wax paper between the slices. I’m celiac and would probably have to freeze some of it and take some out to eat later.
My husband’s birthday is coming up in January, and he loves coconut. I’m going to try this! Came looking for a basic recipe that I could adapt with coconut flavor using the methods from Cook’s Illustrated cookbook’s coconut cake, which is mind-bogglingly delicious. I DREAM of that cake! If you love coconut, I highly recommend it!! BUT, it’s a huge cake and very rich (the coconut buttercream will send you into the stratosphere), and we just can’t eat that much cake, lol. Plus we’re trying to lighten up after holiday decadence. I think coconut extract and cream of coconut (this is the sweetened stuff that’s used in pina coladas, Coco Lopez brand for example) are the things that give so much flavor to the cake, so I think I’ll just add that to this recipe and maybe cut the sugar a bit. I’m also going to try making it as muffin tops! Had great success baking a cranberry pumpkin bread recipe in a muffin top pan. Each little cake is so perfectly moist, and a perfect serving size. Can’t wait to try this! I think the coconut shreds in the batter is going to give great texture! Thanks! 🥥🤎🤤
We love to incorporate anything coconut into what we eat like coconut rice, coconut cake, braised chicken in coconut milk and of course coconut bread which is pferfect for breakfast and snack. Joy, we will try your recipe. Cheers, Domenico.

Stephanie we make a lot of this style of baking with coconut also every house has a few coconut trees growing in their back gardens. I just want to try o suggest it would be much nicer instead of using cinnamon to use cardamon either the seeds crushed and bruised or powder ed version. Just has to be sparing with it it is much nicer than cinnamon. TQ.
Madam...can I use dessicated coconut? Here in our place we couldn't find coconut flakes. And for topping can I use blanched almond flakes? Waiting for your reply Madam
hi steph, thank u for all the videos & info, very very helpful indeed. I hope u can help us with our dilemma, recently we got an air fryer "oven" with three tray shelves, it's heat plate is from inside top, like a broiler, no hot plate at bottom or grill. struggling when making the sandwich bread loaf, as it seems it heats & brown the top while bottom & sides still white & not done at all. I tried to take the pan half way & filp the loaf upside-down, then I repeat the same for each side. it is uneasy & a haste to say the least. I can't cover the loaf pan with foil as it rises as it is heated & also aluminum is not healthy. what do u recommend we do? Thank you 🙏🙏
The heat needs to come from the bottom or the back if you have a fan. If it comes from the top you’ll have problems. I know of know solution to the problem with the oven you are using. If you can return it I would.
