1. That's not the "high" E, it's the 2nd octave E. High E is -|-23-56-(closed bell).

When i take my thumb completely off it makes a high e. Is this because my recorder is not made well or is this a way easier method to play high e?

You're probably overblowing. It may make the high E easier, but if you try this with the other high notes (F and above) it may start to sound shrill.
