Slow Cooked Pork (Nqaj Npua Tsawg) Hmong Style

Hello Foodies!
Here is a classic Grandma dish that I LOVE to eat, but can only eat it once year because of how rich it is. This is Hmong style slow cooked pork. What's different about this slow cook pork is how we cook it. It's slow cooked in its own fat and then reduce/cook in the fat even more after it's been slowed cook. Basically this is a FATTY slow cook pork. But it is super delicious with rice. My Grandma would use a pigs head to make this dish. But today, I'll be using pork belly and pork knuckles since it's easier to access those parts. We'll be making two kinds: One with mustard greens and one with ginger to balance the richness of the pork. So give it a try and make sure to not eat too much of it ;) Happy cooking!
NOTE: Cooking in a pan, instant pot, and pressure cooker will call for a couple cups of water so you don't burn the pot! Like always, fresh pork is the way to go with this recipe.

14 lbs pork bones/feet/knuckles mix (w/ meat still on)
2 lbs pork belly (with skin)
2 lbs mustard greens
1/2 - 2/3 cups minced ginger
Salt
Mushroom seasoning
Pepper sauce to serve with

I’ve been in the military for about 5 years now living in Japan and every year I go home for vacation my grandma would ask me what I wanted to eat. I always chose this dish, it’s SO GOOD. It’s been 2 years since she’s passed away and nobody in the family knew how to make it like she did. I just want to thank you for making this video so that I can make this when I’m missing my grandma

Using the slow cooker is such a great idea! I loved eating this when I was smaller. My father was a shaman, so we got pig head often and my mom used to make this and I was meaning to ask her how to make it, but just never got around to it. She passed away about a month ago and I wish I had paid more attention to her cooking when I was still living with her. Thanks for all your videos! I've been watching through them and discovering old favorites.

I love the drier version with ginger. My grandma made this all the time, it’s a dish I haven’t eaten since early 2000’s she passed away in 2006. Now that I know how to make it, I’m so excited to try your recipe! Thank you so much!! ❤️

Love this dish! My mother-in-law used to make this almost every time a pig was butchered. The version she made was with ginger and red chili pepper flakes. She called it nqaij txob (pepper meat) and sauteed the ginger & pepper before adding the pork. You are correct about the length of cooking (12-13 hours) and including trotters and other meat parts with cartilage and tendons - makes a huge difference in flavor and you get different texture in the final product. My mother-in-law would cook it to the point just before the meat starts to crisp up; that way, when you reheat future servings you can easily get it to crisp up within a short amount of time. She always gave us at least a packed quart container of this delicious meat. Unfortunately, she passed away in December 2018, and I probably won't get to enjoy it anymore unless my wife decides to make it (the length of time required always made her shy away from making it). With your slow cooker idea, my chances of enjoying this dish again just went up. Thanks.

I miss this dish! My dad used to make this and it was fantastic! Funny how when I was a kid, I didn't appreciate it as much, now that I'm an adult, all I want is hmong food!

Do the pork has to be only from the bones or can you make this dish from pork belly to pork leg and butt? Or just any different body part from the pig?

I prefer with bamboo shoot n green over mustard green...for dry version I dont like ginger so my parents will just heat until its dry n we just eat with rice in water n little meat dip in pepper sauce. Yummy....or I just cook with green onions n season with chilies, oysters sauce n eat with rice. Yummy.

Good memories. My Grandpa used to cook this dish 30 years ago when I was kid, the very fatty and very soft version with slow cooked pork and lots of green ^_^ I was delicious I don't remember how he was naming this recipe but I am pretty sure the dish name contained the word "Nyoj"

Try it as Hmong tacos with local herbs available. Mexican gonna be jealous. You're doing great. Substitute cabbage for mustard green and you have Hawaiian Kalua Pork.

Hawaii it's Kalua Pork and Sloppy Joe in the Midwest but this one is better. Low Country, add Collard greens instead. Poland, add sauerkraut.

May I ask, what is mushroom seasoning, please? It must be important because other than the ginger and salt, it's the only added flavoring besides the chili sauce at the end. Thanks very much. This looks fantastic.

It’s basically the umami seasoning. Instead of using msg we use mushroom seasoning in replacement.

I didn't since I set the slow cooker setting to low. That way the low heat can slowly release the moisture of the meat. Hope that makes sense.

CHawjCreations thanks for answering back so quick. So, my meat has been in the slow cooker for 10 hrs and it’s has not changed color. It’s on low. I’m not sure if I need a new slow cooker or crank up the heat. Lol

You can add a little salt and pepper to marinade if you desire. I didn't marinade the big bones. The pork belly had a little salt and pepper. I usually don't add much since I like to control the amount of salt that goes in after it has reduced and cooked down.

Yes but if too much muscle, it will be too dry like meka pulled pork, it's best with the head n the feet.
