Looks fire! I did some smash burgers that were 50/50 beef/chorizo, hit the patties with onions and mustard before flipping, threw some havarti to melt and did a serrano strawberry jelly to finish and FUCK, seeing your video is a sign i need to go for round 2! Saludos compa

The sugar is food for the yeast. The yeast makes the dough rise because it’s eating the sugar. You can use honey or maple syrup but if you want a nice bun, give it some sugar 😉
Partially true. Dough still rises without sugar. There's plenty of sugar and starch in the flour itself. The added sugar just kickstarts the process. @@katherinecornette5315
I use maybe half a teaspoon of sugar when I'm making bread. You don't want to taste it. It's just there to give the yeast a kickstart. DON'T use monkfruit. It won't do anything for the yeast, since it has no carbohydrates, so nothing for the yeast to consume.
psa you don't have to season both sides of the patty once its on the heat. seasoning right at the beginning allows everything to absorb properly whereas ive found if you season after flipping, the salt doesnt absorb properly and just sits on top of the patty
