SMELT!!! (Catch, Clean, Cook) 

OK. here is my take on smelt. An Portugese grandma showed us how to prepare smelt. Rinse and pat dry them, salt and pepper with flour in a paper bag, drop whole ungutted fishing bag and dredge them. Deep fry, until golden brown. Remove and drain them. Here is the best part. Break off the tail and gently squeeze the fish from tail to head, gently break flesh from around the head and pull the bones and insides out the big end. Natures home made fish sticks, eat or freeze them......try a small batch to get the hang of the techniquec .

Lol oh americans🤦🏻‍♂️. Just Deep fried and eat the whole thing, spitting out your occasional bigger thicker bones. Stop being wusses and wasting so much meat. The head is the best crunchy part!
