NOTE: As I explained in the video, the Kraft Philadelphia brand of cream cheese is the lowest carb. I've also found that the "graininess" or ricotta-like texture of that brand becomes more pronounced after chilling and reheating. If you find another brand that is similarly low carb, but spreads well even after reheating, please let me know by replying to this post. Thanks!
Looks delicious look forward to trying this. I also am curious how this would be with a home made cream cheese. As you could then possibly change ingredients and try different yogurts from whole milk full fat, to different percentages, or even greek yogurt, sheep milk yogurt, or possibly a keto yogurt, or even a thick kefir maybe or yogurt made from home made kefir. I do not know if the kefir is possible however I do not see why not as you normally need yogurt, cheese cloth, & salt. Very interesting I absolutely love smoking things meat, fish, even cheese you should try smoked mozzarella it is delicious as well.
I make this pretty regularly, now. It's a nice, easy little somethin'- somethin' extra flavorful in my BBQ Fatty filling. I usually use Walmart brand cream cheese ( 2 carbs per, wish it was lower). I smoke if on either my Traeger or offset smoker after I'm done with a cook, so I can let the temp die down. The edges of the cream cheese almost get a toasted marshmallow texture. That usually dissappears before becoming filling. lol Thanks for showing that indoor smoking pot. I don't know how I've never seen one of those before! Pretty nifty. As usual, Colton is adorable!♡
I don't know if it would make a difference regarding graininess, but Philadelphia brand cream cheese puts out a different original block cream cheese marked "kosher for Passover" in the spring. Some store brands, such as Lucerne brand from Safeway, does the same. I think it's the enzymes and possibly stabilizers which are changed for the Passover production. If I remember when the Passover version shows up next year, I'll try smoking some at that time and seeing if the graininess is still there.
We've tried Aldi, Lidl, Great Value and other brands of generic cream cheese, and always go back to the Philly brand. The generics tend to have far more gums, and are much "stickier", and "clump" more in recipes. Our local Sam's usually has a 4 pack of Philly for under $5.
Yes, Steve, and also that they don't melt as smoothly as Philly does in sauces. I was really surprised with the results of your smoker test. From my experience, I really thought the Philly brand would have been much smoother.

Wow... just when I thought that I had enough kitchen gadgets... Steve shows me one that I must have. I just ordered the Camerons cheaper version. It will fit on my induction stove or toaster oven. After breaking my femur at the end of July, I'm 3 months non-weight bearing on my left side. I won't be able to do any grilling this summer, but at least I can now add smokey goodness to my keto food. Can't wait to smoke me some cream cheese! Thanks Steve.

Have made this twice now, so thankful for your recipes! Today we tried Kite Hill almond cream cheese with this recipe. It turned out very good, not as smoky flavored . Will try again and leave in the smoker for a hour and a half. Still really enjoyed it. Just a FYI for anyone who can’t have dairy, you might like this.
The Keto rub is something I use on almost everything I make. Used it on stuffed pork chops and it came out great. Philly cream cheese is actually a pretty good cream cheese ingredient wise, though I’m sure they use the cheapest milk possible. I use Organic Valley when I can find it as it’s made with pasture raised cow milk. This would probably go great in the pimento cheese recipe.

This was the first video of yours that I’ve seen so I was a little surprised that Colton was your grand child! Keto makes us look good while making us last longer!
Looks great! Thank you for pointing out the difference in carb counts. I never bothered to look at the Great Value brand I have been buying, which now that I checked it, has the same carbs as the generic you used.

Tried this right after watching this video. Not sure why I hadn't seen it anywhere else but ... whatever. Used Philly brand, 225 for 2 hours on a pellet smoker. Wow!!!! Creamy, soft and really, really good! I used a commercially available rub from Rec-Tec called Asian Persuasion but I'm sure whatever you use will be great. Thanks for the video, Steve!! It will definitely make my regular rotation on the smoker now. Oh, by the way, this stuff is great cold too, rolled up in deli ham slices for a snack or appetizer.
Holy cow Batman! Making this tomorrow! My cream cheese usually has a jalapeño and bacon friends. This will be fab for my family that can’t handle spice!
I also have this smoker (and talked about it in The Community) and it is a game changer for folks in apartments, condos, or in the winter. Having smoked items (try smoking tomatoes!!!) all year 'round is **heaven.** BTW, the less expensive smoker is pretty tiny, 11 x 7. Plenty of room to smoke cheeses, a little small for a rack of ribs.
OMG Steve makes me want to get a smoker!! I LOVE smoked cheese!! Now I was also thinking of getting one of those 8 in 1 air fryer ovens with a dehydrating setting! Meat chip/ smoked cheese party at my house!! 😂

Hey Steve...I have never tried "smoked cream cheese"...something for me to try, thanks...I have done Monz, old cheddar, and extra old cheddar...I watch your meat chip video, and my dehydrator just arrived from Amazon...keep going, my friend...:) I watch you all the time...I do smoke jalapeno's with a mixture (Phil) cream cheese and extra sharp cheddar wrapped in a thick-cut bacon on the BGE...what a treat...:)

I think the "graininess" is from the lower carb count. Less whey in the cheese. I make yogurt and found that it gets really grainy the longer I drain it. And I do not use a sweetener in the yogurt. With that being said you could almost pass it off to someone as cream cheese.
As much as I would have liked the Resto, I opted for the Camerons indoor smoker because it’s more economical and it’s not something I’ll use very often. (That, and my poor kitchen cabinets are stuffed with gizmos.) My outdoor smoker is a beast and I luv it, but SE Texas weather is finicky-blazing hot is a given, but rainstorms pop up with little warning and are often accompanied by wind, occasional hail, and too much lightning for my liking. Grilling and smoking have to be very carefully timed. Sooooo, unless I’m smoking a big brisket or pork shoulder, indoor smoking is perfect. Thanks for the recipe and the helpful links!
TIP - maybe already covered below - but if you cross hatch or score the brick first - it hold together better, or where it does separate, it does so along your score lines. Doesn't matter either way - it's YUMMY!

@@SeriousKeto when I try to take them out of the wrapper. It clings to the wrapper with all of its might. Your block was nice and pretty and in block form. Mine looks like it was mauled by a bear.
@@mikeware1764 A lot depends on the brand. Kraft uses less gums than the other brands, so it comes off the wrapper more easily. It's also possible that I just have mad skillz when it comes to extricating cream cheese from the wrapper.
You can also just old smoke them using a $12 smoking tube filled with wood pellets. Great for smoking salmon and other cheese too. The smoke tubes would work on any grill. Doesn’t need to be a pellet smoker. Just anything you can close. No heat needed
In Poland we don't have Philadelphia wrapped. It's only available in plastic containers. You can only scoop it out, so it can't be brought into a tray that easily... I wonder why there is this kind of a difference in packaging between countries.

Smoked cheese always tastes better after resting for about a week after smoking. Raw, pronounced smoke flavors mellow and the cheese flavors return for a better balance of smoke and cheese.
What I want to know is how you keep the smoke alarm from going off?! Mine goes off when I boil water! lol Anyway, I will need to get a little grill for the patio. Great recipe!!

I've used Hickory, & Post Oak on an offset smoker, & a Competition Blend (of pellets) on my Traeger. The Post Oak needed the least time, as I perceived it as a 'more assertive' smokiness on the Cream Cheese.
How do fridged leftovers hold up? Looks like it is best warm, fresh out of the smoker. Does it need to be reheated? Thx for the recipe. I've got a few blocks of cream cheese that need a new destination...

i whish i could find the same "kraft philadlphia cream cheese " you found i have been using/eating a lot of cream cheese over the last year and they all (kraft brand ) say 2 carbs per ounce i did find a generic brand (1 carb ) but there is a difference in taste
That's interesting. I generally use Philadelphia (cuz it's less slimey). I’ve baked it, boiled it and overheated it every which way and haven't noticed graininess
I've heard that some keto folks make yogurt out of the FairLife lactose free milk. My position is that if it doesn't knock you out of ketosis and doesn't spike your blood glucose, it's "keto friendly".
I have almost exactly the same smoker - but the wind knocked is off the patio and the door broke off, the hinges are trashed, I don't know if it can be fixed! So sad, I miss using it!

Have you ever thought about using a smoke generator with pellets and keeping your temp below 100 degrees so as not to melt the cheese? This also goes very well with hard cheese.
