On this cook, I smoked a Wagyu Tri Tip Brisket Style. I've always wondered what a Tri Tip would taste like if you cooked it like a brisket and today was the day. The total cook time was 3 1/2 hours at 260-275 degrees on my Yoder Frontiersman. The flavor was absolutely delicious and extremely tender.

I've been smoking tri-tip brisket style for 15+ years on my weber 22" kettle using choice and prime and had no problems with them. I luv smoking it on Thanksgiving and other family get-togethers. This is a great video.

Very interesting approach Joe. Here in California Tri Tips are easy to find, but all this time I've never cooked it through like a brisket. Always the way you mentioned, internal temp of 135. Looks like you way turned out great!

I hadn't even thought of USA grown Wagyu for tri-tip. I'm in Oregon and there's a lot of ranchers here that raise Wagyu and Wagyu/Angus cross. (Wangus?) I'm defrosting a Costco prime grade tri-tip to try brisket cook style for New Years Day. Once I get the method down to what I like I'll have to try that Wagyu for a special occasion. Great video, and thank you Texas! Texas is probably my favorite state Other than Oregon. I've spent 8 months in Texas doing training with the National Guard a couple of times and always was impressed with the hospitality, culture, and good food there. Cheers!

Very nice Darren. What part of Texas did you train in? I think that all American Wagyu is mixed with black Angus. Pure Wagyu would be super rich in my opinion. I wish my Costco sold tri tip. I might ask if they can bring some in. 👍🏼

I think the Kosmos injection helped a lot aside from the Wagyu marbling. A brisket flat is an extremely lean muscle with no fat in it and comes out juicy every time with that injection (mixed with his Moisture Magic as well). I'm definitely going to try a tri-tip on my stick burner with this method. I might wrap it in paper to preserve bark, but if I do that I won't get the braising au jus that you did. Interesting. Great Video! I love smoking briskets, but sometimes it's just way too much food and not enough people around to eat it. This is a great alternative! Also being in Southern California Tri-Tip is one of the easiest cuts to get.

Joe, I have only did 1 TriTip and it did NOT look like that. The juices just dripping from that thing! Great cook and video showing a different why to cook a great cut of beef.

Helpo Rico, use a prime and spritz using 50/50 water and apple cider vinegar frequently. You can also add some beef broth tobthe foil once you wrap it.👍

30 years ago when Costco first started selling tri top, it was dirt cheap because people really didn't know what it was. They were used to seeing New York strip, T-bone, porterhouse etc. Now all of a sudden it's popular and the price is ridiculous. I saw some tri tip at our local Safeway store that was $95 for about 2 lbs, 3lbs max.

I smoked this way over 135. I believe it was right at 200° or until it's nice and tender. 👍

177 is overdone after carryover. Pull at around 125 for medium rare.

The flavor is really lite but it pairs well with the beef to me. Try it out. I mix it 50/50.👍

Sorry, I can’t do it. Wagyu in my opinion is ruined at 200 degrees. If it was tender and juicy at 200 degrees imagine what it would have been like at 135 degrees. I could never waste that kind of money. I’m sure it was good but IMO could have been better if not taken to beyond well done. Thanks for the video though.
