Place pork in Boiling water, green onion, ginger and wine. Remove from the pan and prick the entire rind (with a fork) then rub in salt and vinegar. Prepare the basting sauce in a food processor using shallots, cilantro root, seasoning powder, BBQ sauce, chinese five spice powder, black pepper, clausena indica leaf, cooking oil. Score the top of the pork meat surface into a 9 x 9 grid pattern. Rub in the blended mix into the scored lines and cover the surface. Allow to dry in the sun ( marinate) for 2 hours. During that time prepare the dipping sauce: fry in some oil, minced garlic, soy sauce, chili sauce, vinegar, sugar. Cook then add: black pepper, cilantro chili sauce. When marinating is done, put in oven. First grilled for 20 minutes at 175°C then second grilled for 15 minutes at 250°C .
