So - Tender Swiss Steak
1 cup all-purpose flour
2 teaspoons salt
1 teaspoon pepper
2 pounds round steak, cut into serving sized pieces
Vegetable oil
1 medium to large onion, sliced and separated in rings
2 cups boiling water
2 Tablespoons Worcestershire Sauce
Gravy:
1/4 cup all-purpose flour
1/4 teaspoon salt
1/8 teaspoon pepper
1 1/4 cups beef broth
In a shallow bowl, combine flour, salt, and pepper. Dredge steaks a few pieces at a time. In a skillet, brown steak in oil on all sides. Layer onion slices and steak, alternately in a Dutch oven. Combine boiling water and Worcestershire sauce and pour over the steak and onions. Cover and bake at 325° for 2 to 2 1/2 hours or until the meat is very tender. Remove steak and onions to a serving platter and keep warm. Save the pan juices.
Make the gravy by placing the flour, salt, pepper, and broth in a jar with a tight fitting lid. Shake until this is well mixed. Using a sauce pan, bring the pan juices to a boil, then pour in the broth mixture. Stir for approximately two minutes until slightly thickened. Pour gravy over the steak.

My mom taught me how to make this when I was a teenager. She called it poor man's meal, because it would feed me my brother and her and still have leftovers for her to take to work the next day. She would have the steak tenderizer at the butcher. When it was done we had mashed potatoes and green beans and biscuits to sop up the gravy. I made it for my husband on our first date and he fell in love with it. He said that was when I fixed that he knew I was a keeper.

I am so happy to see your recipe. I'm 70 years old. My mom used to make Swiss steak with gravy when I was a kid. I couldn't find her recipe since she hadn't made it since I was about 10 years old. She used round steak as well. None of this modern hamburger patties I see used in new recipes for Swiss steak. Lol. Round steak was always cheaper and this was always a great way to have round steak tender enough to eat it. I think she had a slightly different technique, as I remember her cooking it all in a big pan on stovetop. But it still simmered for a long time. I can't wait to try this. Brings back memories of my Italian mom, who passed away 3 years ago. I love your explanations and running commentary, as I think its a great way to teach and encourage young cooks.

That looks so delicious. I always use round steaks to make a dish we call 8 hour steak. You simply take 2 round steaks, place them in a 9"x 13" pan. Pour 2 cans of cream of mushroom soup and 1 pkg. of Lipton onion soup mix on them. Cover with foil and place in a 200 degree F. oven for 6 to 8 hours. The soup makes a delicious gravy and I also serve it with mashed and corn. Too funny!

I cook round steaks in my casserole crock-pot like that. I do sear the steaks first, but no flour. Just a quick sear on each side then into the crockpot (it's the shallow 9" x 13" rectangular one). Add the soups, cover and cook on low all day long. It's just Crock-Pot Steak in Mushroom Gravy at our house.

Swiss steak is one of our family's favorite dishes!! My Grandparents made it. My Mom made it, and now I carry on the tradition! The children in our family who didn't have the opportunity to know their Great-grandparents or Great, great Grandparents, get to know them thru this dish. I love sharing stories of my Grandparents and my Mom with the younger kids. It allows them a connection with some of the best people in our family. When we need comfort food, I make Swiss steak. We make ours a little different. We use tomato juice as the broth and gravy. My son used to call his plate "Swiss steak with volcano potatoes." LOL. We also serve with corn and a salad with oil and vinegar dressing. Thank you for the video and walk down memory lane. I needed it today.

Steak and gravey was my favorite meal as a kid. And still is my favorite as an adult. Mom always browned off the Steak in an iron skillet. Then made gravey from the dripings. Add the Steak back and simmered on low for several hours. It cut like soft butter. The only thing I do different now. Is I use a slow cooker to simmer it in. I even still pour the gravey over a slice of bread.

My mom always made Swiss steak but it was different a bit. But, it was just as tender and delicious! Dredge and fry it up the same. But she would cut onion, peppers and carrots and would mix beef broth with pan juices from frying meat as well as a big can of diced Italian tomatoes over the meat and cover and bake. The flour from steak would thicken everything perfectly and would have it with rice or mashed potatoes. Now I need to make some Swiss steak! Yummy either way to me!

I'm of Viking and Italian DNA. This is more reminiscent of my Swedish Ancestry Meatballs with Brown Gravy. The Minnesota Family Story was upon arrival from Sweden about 1850 they survived in Grass Covered Dugouts. And in their first year during Blizzards they beat grass from the dugout ceiling with rocks into powder. Then mixed it with "mush" to form their meatballs. Whereas my Sicily / Milano Italian family used stewed tomatoes, Lots of Mushrooms from the hills ( often dried ) , Garlic, Basil, and of course plenty of Wine. (Both versions including Onions). Using any meat available.... Chicken, Oxen, Horse, Goat, Beef, Mutton, lord knows "what else "....But I remember Pigeons and Robins being mentioned...etc. I remember my late Mother always preferring the Italian version. And it had to be slow cooked on the woodstove in a Cast Iron Dutch Oven. Equal amounts of White and Zinfandel Wine from the family Sonoma Vineyards from 1880 to prohibition. That is until advent of Crock Pots. Which I think was early 1970s. Just when I believe I have most all my family recipes all into PDF files I just discovered another.... ""Sweet Sardine Spaghetti from Sicily "" - the sweet being Brown Sugar or Honey- whatever was available.

This looks delicious! I have a similar recipe. When I first started working, many people swapped recipes and Swiss steak was one of them. There used to be a steak you could buy called Swiss steak. Haven't seen it in years, but round steak works as well. Just mix an envelope of Lipton dry onion soup mix with a can of Campbells cream of mushroom soup + 1 can water, cut the steak up into serving-size pieces, put all this in the Corelle dish and bake for 2.5 hours at 325 F or until steak is tender. (The mushroom soup, water and dry onion soup mix make a delicious gravy.) Not necessary to fry before baking. It is wonderful! I've made this for the last 50+ years! Of course, serve with mashed potatoes, corn (or vegetable of your choice) and rolls. Try is sometimes. It's wonderful.

Looks so delicious. I live alone, so this looks like a lot of food. Maybe I can try to cut it in half. I think freezing all that might be too much. Idk going to try it. Thanks for sharing. I would truly be honored to come sit at your table. My dad, thank God did most of the cooking until he married my step mom. I really enjoy your videos, brings back memories of my dad in the kitchen. God bless you both.

Yum, going to make this! Only think different I will do is use the pan that I fried the steak in to make the gravy. All those luscious bits in there for more flavor!

Thanks for this recipe. Now just have to plan ahead as to baking so long, so we don’t eat at 10 at night! I still have a dish like your Mom’s that belonged to my Mom.
