RECIPE: (Makes 2 c 6" cakes)
For the Cake:
- 3 Eggs
- 1 Cup Granulated Sugar (200g)
- 1 tsp Vanilla extract
- Pinch of Salt
- 1/3 Cup Vegetable oil (80ml)
- 2 Tbsp Lemon Juice (Use real lemons!) (30ml)
- Lemon zest of 1 lemon (or to taste)
- 1/2 Cup milk (120ml)
- 1 1/2 Cups of flour (cake flour or all purpose) (192g)
- 2 Tsp Baking powder
- Yellow gel colouring (optional)
For the Lemon Buttercream:
- 1 Cup room temperature unsalted butter
- 1 Tbsp Lemon juice
- 2 Tbsp Hot water
- Lemon zest to taste
- 1 Cup Powdered sugar
1. Beat butter until light and fluffy.
2. In a separate bowl combine powdered sugar, hot water, lemon juice, and lemon zest. Cover and allow to cool.
3. Add sugar mixture to butter and beat on high until light and fluffy.
