Chestnut roll, naturally leavened! Pair with chestnut spread and diced roasted chestnut, absolutely delicious!

~Recipe yields 16 chestnut rolls ~
Sweet Stiff Starter
40g sourdough starter
120g high protein flour
55g water
20g sugar
Ingredients (Dough)
300g High protein flour (bread flour)
30g sugar
6g salt
160g milk
1 whole egg (55g)
30g unsalted butter
All of the sweet stiff starter
Fillings
200g chestnut spread
20g all purpose flour
5g cocoa powder
100g diced roasted chestnut

20克 糖
材料 (麵糰)
300克 高筋麵粉 (麵包粉)
30克 糖
6克 鹽
160克 牛奶
一顆鷄蛋 (55克)
30克 無鹽黃油
全部糖硬種
内陷
200克 栗子醬
20克 中筋麵粉
5克 可可粉
100克 剁碎甘慄仁

Hi Autumn, this looks amazing. Can I substitute starter with 3g of instant Yeast, maintaining other ingredients unchanged? Can it still yield a nice soft bread?

Yes you can use 3g yeast, the starter part repair with equivalent weight of flour and water

Typo. Starter part Replace* with equivalent weight of flour and water (40g starter - replace with 20g flour 20g water)

Hi Autunm Kitchen, thank you for a very detailed video. I love chestnut too. I'm very new to the sourdough, please don't laugh at me but may I ask when you make the Sweet Stiff Starter, the part the you put it in a jar and put it away. May I know for how long we have to leave it? for how many hours or over night? And where should I leave it, outside on the counter or in the fridge?

Leave the sweet stiff starter peak at room temp (27-28C) and it should triple in 7-8hrs. If your room temp vary, just leave and use it when it’s peak/triple
