Spelt flour is more demanding and capricious to work with, but products with it have a very pleasant nutty taste and aroma. Therefore, if you have the opportunity to use spelt flour, I highly recommend it.
Recipe for 1 loaf
FERMENTOLIZE.
250 g whole grain spelt flour
250 g wheat flour (minimum 12% protein)
100 g active young sourdough starter
375 g water 32-36C
DOUGH
25-75 g water 30-32C
10 g salt
Bake at 250C with steam for the first 20 minutes, then at 230C without steam for another 20 minutes.
