Southwestern Egg Rolls | Chicken southwestern egg roll using tortilla 

Hi Neighbours, I hope you are all doing really well. Today I made some southwestern egg rolls. If you like southwestern flavours and burrito kind of style egg rolls you are going to love these. I used chicken thighs instead of breast because that is what my guys prefer but you can use either or.
Ingredients I used ( I filled 12- 14 6 inch round tortillas )
4-5 boneless skinless chicken thighs
3 tablespoons of oil to fry up the chicken and other ingredients
1 tsp of ground cumin
1 tsp chili powder
1 tsp dried parsley flakes
pinch of cayenne
1 small red bell pepper diced small or any sweet bell pepper you like ( 1/2 cup )
3/4 cup frozen corn or175 mls
1/4 cup of green onion finely chopped or 59 mls
150 grams or 5.3 ounces of frozen cooked shopped spinach thawed and squeeze out the water at least a 1/4 cup worth
1 jalapeno seeded and take the ribs out unless you want some heat ( Finely Chopped)
1/2 cup of can black beans that have been drained and rinsed
2 cups of grated Monterey jack cheese
Cook chicken in a medium saucepan over medium heat until meat is no longer pink and juices run clear, about 5 minutes per side. An instant-read thermometer inserted into the center should read at least 165 degrees F
Dice chicken and mix into the pan with green onion and bell pepper. Mix in corn, black beans, spinach, jalapeño peppers, parsley, cumin, chili powder, salt, and cayenne pepper. Cook and stir until well blended and tender, 5 minutes. Remove from heat and stir in Monterey Jack cheese
Spoon even amounts of the mixture into each tortilla. Fold ends of tortillas, then roll tightly around the mixture.
Heat oil in a large, deep skillet for deep-frying to 375 degrees F (190 degrees C). Deep-fry frozen, stuffed tortillas until dark golden brown. Drain on paper towels before serving. I would seal them by brushing the edges with egg wash or tightly wrap each one and refrigerate a few hours this will help them stay together. Then unwrap before frying.
