I made some blended zucchini soup inspired from your recipe and used a block of silken firm tofu instead of potato (because I didn’t have any) It was so creamy and delicious. Just wanted to mention it in case anyone else is interested.

Very excited about your cookbook My mum is from India so.we have been eating Indian food since birth. Going WFBP and no oil is an alien world in our culture 😅 I have been cooking same foods but just cooking onions in water instead of oil. It is doable and your taste buds just adapt ❤

Hello again, Amy, I wrote you yesterday with some Ninja Creami recipes. Here is one I forgot. It's Earl Grey ice cream. 2 cups of soy milk Heat the milk and steep two Earl Grey tea bags in the milk for only 4 minutes to avoid bitterness. Add i teaspoon of liquid vanilla extract and one eighth to one fourth teaspoon of powdered vanilla. Add in 2 tablespoons of Maple syrup...mix and pour into ninja creami jars and freeze. I love this one!

Ice-cream all the way! Have you ever thought of wrapping ice-cream? I am Asian and Taiwan has this peanut ice-cream roll that is incredible. It's basically flour crepe, rolled with crushed peanuts, ice-cream and cilantro. Cilantro may seems odd, but I love it.

As someone else said, I wouldn’t ever think of the things you have made. The only time I tried Ethiopian food was in Washington DC in the 1990s when a friend from work invited me. I remember enjoying it but feeling very out of my element trying something so new. Today I went to the shops and got onion, cabbage, carrots and frozen green beans (which is a shock to me since green beans are not close to being a favourite of mine) so I can cobble together your Ethiopian inspired cabbage dish. Going to make it tomorrow and I’m sure it will be super yummy. Love your arms by the way. You are really kicking it with your goals! And also yes to living in the moment. I’ve been studying non duality for the last two years or so and basically we are only ever experiencing now but our minds are focused on past or future. Very fascinating stuff.

Snacking on nuts and bread while I'm cooking, Eating vegan candy, chocolate and ice cream etc. So you reminded me on snacking on fruits and vegetables instead, and making my own nana icecream when I have a sweet tooth. Definitely keep the grocery hauls, it's really interesting to see what other WFPB vegans eat weekly and they're definitely useful price and variety wise, I also love the idea of using the courgette in the ice cream, cauliflower and sweet potato I've used but hadn't thought of courgette even though I have used it in pasta sauces to make them more creamy, another veg I've used to make sauces more creamy is peeled and steamed aubergine! I wonder if you could put that in ice cream??
