All natural sea salt curing process to create this authentic Italian Rolled Pancetta which you can make at home in your fridge just like Piero demonstrates. The most important part of curing without cure mixes is to ensure the meat has sufficient weight loss when drying it out, aim for around 45% min weight loss. Ingredients (part 1)
- Pork Belly 2.5 Kilo (or any size you like)
- Sea Salt 40g per kilo
- Ground Pepper
- 4-6 Bay Leaves
For the SKIN for the Pancetta you can find one here geni.us/pszg You will have to cut out the sheets and use multiple layers. Unless you can find a larger collagen sheet but this will also work for you.
Ingredients (part 2)
Sea Salt 2.5 Teaspoon
Garlic Powder 1.5 Teaspoon
Brown Sugar 3 Teaspoon Brown Sugar
Bay Leaves 3-4 Bay Leaves
Ground Black Pepper 2 1/2 Teaspoon
