~ Strawberry syrup ~
【material】
・ Frozen strawberry 300g
・ Granulated sugar 95g
・ Lemon juice 15g
◎ Preparation
①. Put all the ingredients in a bowl or pan and mix.
②. Wrap and leave at room temperature for 3 hours. (It is good to mix it once in a while!)
* If you can prepare it the day before, you can wrap it and leave it in the refrigerator overnight!
☆ How to make
①. Transfer to a pan and heat over low to medium heat, and simmer for about 10 minutes until thickened.
②. While rubbing the pulp, pour it into a bowl and cool it with ice water to remove the rough heat.
~ Cookie dough ~
【material】
・ Butter 30g
・ Granulated sugar 25g
・ Weak flour 25g
・ Cocoa powder 8g
The amount of cookie dough is easy to make, so there is a little extra.
If you freeze it, you can use it again next time.
◎ Preparation
・ Bring the butter and eggs to room temperature.
☆ How to make
①. Put butter in a bowl and loosen it with a rubber spatula until smooth.
②. Add granulated sugar in 2 to 3 portions and mix well each time.
③. Sift the cake flour and mix it like cutting to make a unit.
④. Open it in a wrap and stretch it to a thickness of about 5 mm.
Put it in the freezer for 10 to 15 minutes.
⑤. When it cools and hardens, remove 11 to 12 pieces in a round shape with a diameter of 4 cm.
Put it in the freezer again until it is used.
☆ If it is not cooled and hardened, it will be sticky and difficult to remove.
If you get sick on the way, please work while cooling in the freezer each time.
~ Choux pastry ~
【material】
・ Butter 35g
・ One pinch of salt
・ Water 80g
・ Cake flour 40g
・ Cocoa powder 8g
・ 2-3 eggs
◎ Preparation
・ Bring the butter and eggs to room temperature.
・ Sift the cake flour and cocoa powder twice in total.
・ Preheat the oven to 200 ℃.
☆ How to make
①. Thaw the egg well and strain it with a tea strainer.
☆ Since only 2 are actually used, melt 2 for L and 3 for M. (Use 109g this time)
②. Put butter, salt and water in a pan and heat over low to medium heat. (It's a good idea to cut the butter to about 1 cm so that it melts easily!)
③. Turn off the heat about 10 seconds after boiling, add the sifted cake flour and cocoa powder at once and mix well.
④. When the powder is gone, heat it over medium heat again, and heat it for about 1 minute while constantly mixing it so that it does not burn.
⑤. Heat down and open in a bowl, add ① little by little and mix well each time.
As a guide, lift the dough with a rubber spatula, and the hardness that remains on the rubber spatula after it falls becomes an inverted triangle.
(Please note that if the first egg is too small, the thickness of the dough will make it look like an iri-tamago! For the last one, add a little bit to adjust! I used 109g this time. )
⑥ Put the dough in a piping bag with a star cap of about 1 cm and squeeze it to a diameter of 4 cm on a top plate with a cooking sheet.
☆ Squeeze the mouthpiece tightly from one point without moving it, and stop squeezing when the diameter reaches 4 cm.
⑦. Sprinkle water with a spray bottle and put the frozen cookie dough on it.
⑧. Sprinkle water again with a spray bottle.
⑨. Lower the oven preheated to 200 ℃ to 190 ℃ and bake for 30 to 35 minutes. (Adjust according to your home oven.)
After baking, put it on a cake cooler and let it cool.
~ Finishing ~
【material】
・ Fresh cream 200g
・ Granulated sugar 10g
・ Strawberry syrup 50g
・ Total amount of strawberry syrup pulp
①. Cut the flesh of strawberry syrup into pieces that pass through the shoe cap.
②. Set aside 50g of strawberry syrup. (Please enjoy the rest with yogurt ♪)
③. Put fresh cream and granulated sugar in a bowl and put it in ice water for 8 minutes.
④. Add ② in two portions and mix well each time.
⑤. After mixing well and standing for 8 minutes, add ① and mix with a rubber spatula.
⑥. Put the shoe bag in the piping bag.
⑦. Make a hole in the side or bottom of the baked choux pastry and fill it with ⑥.
⑧. It's cute if you sprinkle powdered sugar on the finish ♪
