Hi Dr K! Thank you for your question. I do not have any recipes that specifically use carob in place of cocoa. In the past, I used carob a fair bit and my suggestion is substitute by weight, 1:1, for cocoa powder. After blending all of the ingredients, taste and adjust with more carob if needed. What I have found in the past was that different brands of carob had a slightly different degree of "chocolatey" depth.
