Suman Yakap also known as Suman sa Lihiya is another type of suman made from sticky rice, wrapped in banana leaves and boiled for 2 hours until done. It is served with coconut caramel sauce topped with latik or topped with freshly grated coconut with muscovado sugar.
INGREDIENTS:
This recipe makes 9 - 10 suman yakap
For Suman:
- 1 kg glutinous rice
- water
- Banana leaves, cleaned and wilted for wrapping
- 2 tsp lye water
- kitchen twine or plastic straw
For Latik:
- 1 can ( 400ml ) coconut cream
For Coconut Caramel Sauce:
- 1 pcs panutsa or 1 cup dark brown sugar
- 1/3 cup water
- 1 can ( 400ml ) coconut milk
Other Toppings:
- fresh grated coconut
- muscovado sugar
