Super Delicious Korean Pumpkin Soup Recipe 🎃

Ingredients
1 Kabocha
2.5 cups of water
1 teaspoon of salt
2 tablespoons of sugar
1 cup of soy milk
1/3 cup of glutinous rice flour
1.5 cups of water
* Optional
1 cup of peas, cooked
1 cup of red beans, cooked
Method
1. Put the pumpkin in the microwave, cook for 5 minutes.
2. Remove the skin and scoop out all the insides. Cut into bite size.
3. Put the pumpkin in a large pot. Pour water until the pumpkin is half submerged.
4. Boil for 25 minutes.
5. Turn the heat off, mash the pumpkin.
6. Add some salt, sugar and soy milk. Mix well, turn the heat back on.
7. Combine glutinous rice flour with water, mix well. Add the glutinous rice flour mixture over a couple of times. Stir until it thickens.
8. Serve it plain or with some red beans and peas.
