My favourite pudding to make with star anise in the caramel and I like to flambé it with brandy mixed with orange liquor. Served with some delicious vanilla ice-cream cream

Can only give you metric measures. And it's not his caramel but a general recipe. 125g of powdered sugar, 4tblspoons of water, 125g butter. You are mixing water and sugar in the pan you're using for the cake. And then you heat it up and melt and slightly brown the sugar. Stir and watch all the time, don't go away (and caution: it is very, very hot, don't touch or try to taste that) When the caramel has a nice light brown colour, take off heat and throw in cold butter in pieces and stir in. Done. If the caramel gets too dark, better make it again. Burnt sugar tastes awfully bitter. I'd probably throw in a little pinch of salt with the butter.

In France , where it'll stay....And you'll most probably fail miserably trying to copy the guy on the video cuz there are lots of tricks to that recipe that the guys doesn't show ....Also his tatin is totally flattened like a crepe , so that chef himself apparently doesn't even know how to do it properly ...I'll leave it at that
