Wow, you're attention span is so bad you didn't see the expensive Parmesan cheese worth thousands which is added to this to elevate the flavour. It tastes very different to buttered noodles which, I've tried and deduced, is inedible.

In italy nobody knows "fettucine alfredo" and that restaurant is basically for international tourists only. We call it "pasta in bianco" and everybody makes it at home for their kids, as a quick dish or when they suffer from stomachache or fever. If you ask any random place a "pasta in bianco" they'll make that exact recipe for you, but they'll think you are sick 😂

My comment as an Italian: pasta in bianco (or white pasta) would be pasta without seasoning, with only oil and grated cheese. While in my opinion Fettuccine Alfredo is an American horror, which however resembles cacio e pepe (cheese and pepper) which is practically pasta in parmesan cream cheese (NO BUTTER) and pepper. Try it, much healthier than that disgusting butter.

The only thing with this style of alfredo (I’ve made it before) is that you have to eat it immediately. The starch and cheese mixture starts to solidify within a couple of minutes. Tastes great though

Ah, but a thick, preheated plate (you can see the butter start to melt at the beginning of the process) can extend the time before the sauce goes stodgy significantly.

@@robertstewart6099 Just as - in the ramen series - one chef notes that ramen is *meant* to be eaten quickly for the proper experience, while still bordering on scalding hot. Except most ramen isn't going to go grainy and solidify on you.

A quarter teaspoon of sodium citrate per serving works wonders for cheese sauces such as this, it keeps the fat and protein of the cheese from separating

@@Tanador680 Absolutely, but the issue isn't separation so much as it is the cooling of the mass causing a congealing effect due to the cheese content. The sodium citrate will help, but it's no fix any more than American cheese is a fix for cold burger cheese. (For what it's worth, I make my own sodium citrate for my harder-cheese-incorporating mornays, which are often passed through a fine sieve to separate out protein crystals.)

As an actual italian the story of the alfredo pasta is just funny to me, because it literally is a more complex and grease variation of pasta with butter and cheese, that we usually eat when we have stomach aches and fever, because it is caloric but easy on both flavor and stomach digestion so you can eat a bit and feel full without eating much of it, and one american dude came to italy and said "This shit's bussin" and brought it to america and popularized it, with much more butter and cheese. U can also make this pasta with some olive oil if you prefer it that way aswell

I'm from the US. In the 1920's My grandmother was in Rome and wrote a letter about eating at "Alfredo's" and meating Chef Alfredo and having this exact dish! 100 years later one of her great grandchildren ate there last week.

As an Italian, I think this is the most basic and easy pasta anybody coud prepare! I do it when I'm bored to cook... But we don't even call it fettuccine Alfredo... Is just pasta in bianco with butter and cheese. This place surely uses the best ingredients and it's cool to watch, but there are sooooo many more delicious, strange and traditional recipies you could have tried instead...

@@AmarilloMusicAB all the "italian" recipies you see are actually italians. Also the weird breadsticks of olive garden. Surely they are eaten somewhere in Italy. But this is the thing: Italy is a melting pot of cultures... And we love food! So during thousands of years we built an enormous and complex cousine, with thousands or typical recipies! There are food eaten daily in some areas of the country, that other italians may not even ever heard of. But abroad people don't get it and when they come here they order very weird things like this one, that might be famous in US, but absolutely ridiculous here... As I said where I live we don't even give this recipe a name! Btw, talking about similarities with carbonara, a more similar recepy is "gricia": like carbonara but without the egg (just roman pecorino, black pepper and guanciale). And even more basic (similar to the alfredo) there is the "cacio e pepe". But again, we are still talking about very common recipies! Even in my small village there are delicious traditional recipies that you can find only here. So if you will ever come to Italy I would suggest you to don't order carbonara (unless you are in Lazio in a place famous for doing it right), but some traditional recipie from the region (or even the city) that you are visiting!

It's basically buttered noodles, but that's the beauty of (Italian inspired) cuisine. Your not just using cheese, your using Parmigiano reggiano. You're not just using boxed pasta, your using fresh egg pasta. Hopefully the butter is as good as the rest. Combining all of these excellent ingredients is enough to get an amazing dish, no need to add 20 different ingredients and 50 different spices. If the ingredients are excellent, you don't need much more

When this dish was brought to the US cream was added since it allows the creation of a similar sauce without emulsifying cheese, butter and water together. Basically the cream was used to save time by making the dish less labor intensive. Both are good, but the American version is significantly heavier while this version is actually quite light.

When I really had no money I would make homemade fettuccine just like this. The homemade pasta has 2 whole eggs and an additional 3 egg yolks, so it’s loaded with healthy fats and protein from the eggs. Its a really cheap nourishing meal if you have the time and a pasta maker. And pasta makers aren’t too expensive

This pasta is also easy to eat and very calorically dense meaning even a few bites or a small plate will sustain you for awhile edit - plus it tastes amazing easy to eat something delicious especially when feeling down compared to something less appealing

alfredo actually made that dish for his wife while she was pregnant because she was consitantly hungry. He later put this dish on his menu and i was a huge success. The walls are covered eith famous people who came to taste the pasta. As someone who lives in italy and goes there every 2 months it an experience everyone should have

Salt and pepper isn't spice and also because of how flavourful the cheese is, not to mention salty asf, nothing else is needed. Obvs don't expect a highly seasoned dish but the high quality ingredients make up for that.

In Italy, most of us simply call that “pasta in bianco” which means "white pasta". Although it was created by an Italian chef, namely chef Alfredo Di Lelio in Rome between 1908 and 1914, paradoxically Alfredo pasta is a much better known recipe in America rather than here in Italy. Apparently, Alfredo pasta became famous and was subsequently exported to America thanks to the meeting with Douglas Fairbanks and Mary Pickford, two Hollywood stars, who tasted this specialty in the restaurant on Via della Scrofa that Alfredo had opened in 1914.

@@TheJasoncash83 I’m just saying, here in Italy, pasta with butter and grated Parmesan cheese is simply called “pasta in bianco”. In fact if you go to any restaurant in Italy and ask for Alfredo pasta, 9 times out of 10 they don't know what you are referring to, and 10 times out of 10 if you are not in a big Italian city. If you really want a plate of “Alfredo pasta” in a restaurant in Italy, just ask for "pasta in bianco" and they will know what to cook for you.

So Alfredo and Cacio e Pepe are quite similar but Alfredo uses Fettuccine, Butter, and Parmigiano, and the pasta is tossed over the cheese and butter with some pasta water so that it becomes coated in a creamy sauce. Cacio e Peppe uses spaghetti, simmered black pepper, and Pecorino Romano. The pasta is parboiled, and then finished on a pan with pecorino, the cooked pepper, and some pasta water, until creamy. Interesting.
