1000 g. bone-in, skin-on chicken
5-6 cloves garlic
½ tablespoon coriander seeds
7-8 cilantro stems, chopped
1 teaspoon white peppercorns
¼ teaspoon salt
1 teaspoon sugar
2 tablespoon Thai soy sauce
1 tablespoon fish sauce
1 cup crispy flour
½ cup water
Oil for frying
Fried shallots
