½ kg Thai Eggplants, halved and soaked in water:
1 cup sweet basil leaves:
1 ½ box coconut milk:
4 tbsp. Thai Red Curry Paste:
2 tsp. fish sauce:
1 tbsp. salt
1 red chilli:
1 tsp. sugar

Wonderful and simple video, thank you Somjit! Do you have any suggestions if kefir lime leaves are unavailable? I live in an area where I can never find them! Thank you

Hi Barigell, Thank you for the comment. Mostly kaffir lime leaves are available around Asian countries because we use the leaves in our cooking. If you live in an area that is hard to find the kaffir leaves, I can think of 2 option:- @plant it in your garden, you may need to look out for the sapling from online. Alternatively, if you happen go to Asian grocery store you buy alot as it can be kept in freezer.
