In the video I show you how to make the Bacon Egger! Made with ham flavored pork bacon egg cheese this sausage will be a hit at the breakfast table for sure!
It is one we played around with at the shop a long time ago and ended up really liking. We put some samplers out there to the public and it has been on the shelf ever since!

i am going to try this but put them in a 4" plastice to freeze and then cut before packing, but that is one solid recipe, keep em coming because your doing nothing but expanding my repitwar...

Wife and I made a batch of these and loved them. Turns out the 8 kids and 17 grandkids do too. We are now making 100 lbs of them!!

Hey thank you. You betcha we can do that. Those farmer sausage are "the thing" in Manitoba. Last year we replicated the Winkler farmer sausage for a fellow from Manitoba.

Great vid! Just subscribed after watching it, looking forward to learning more from you :-) One suggestion - cook the sausage and try it at the end of the video. Would love to see the cooked cross section! As for recommendations - would love to see small snack sticks, like beef or pork smokes, and would also love to see chorizo. Best wishes to you!

Thanks! I am glad you enjoyed it. I have thought about that (cooking and showing a cross section). I was just worried that the video was getting pretty long. Sounds great, I think the next video up is going to be the Beef Snack Sticks or Beef Pepperoni. I have got that request a few times now. Thanks again for the feedback/ encouragement.

You said you want to know what I have for breakfast. every single morning, I have 1/4 of a medium yellow onion (Sliced almost paper thin with one small yukon gold potato (pre boiled) and sliced pretty thin and one "large" fried in 1 tbls of butter then add one tbls more butter to the pan and fry one egg easy over. place the potatoes and onion on the plate, place the egg on top. sprinkle with a tbls of sharp cheddar cheese. EAT

Loved the video, very informative and cool idea for a breakfast sausage! If you are still taking requests, I'd love a video on Moroccan Merguez, my personal favourite. I think if would be nice to see you work with another meat than pork, as well as lamb casings. Keep up the great work!

Duncan, you are our new hero; so inspirational. We have newly begun sausage making, and found your channel. We began our sausage making quest as a couple of old American Norwegians in search of the potato sausage of our youth. Apparently, no one makes that sort of thing anymore. We are old enough to have known our elders, but do have the recipes, or skills, of our elders; sadly, we should been more attentive at the time. We have made some pretty good tasting simmered potato sausage, but it falls apart. Do you have a suggestion for us, or a traditional recipe, or do you already have the video we need? Thanks!

They're smoked to 135. So they're only partially cooked. Glad you like the videos!

We’re the bacon strips pre-cooked? I saw that he eggs were cooked but I couldn’t see if the bacon was cooked

No water in this recipe? For other recipes with water, would it make sense to add all the dry spices to the water first, then pour the slurry onto the meat mix? Better mixing?

No water in this one. You can it's kind of six one way half dozen the other sort of thing. Just make sure you get all the spices onto the meat and mix well.

when it comes to stuffers what should you look for?

When you are buying a stuffer i'd suggest looking for these couple things. 1. You want stainless equipment. If they have plastic cogs/gears or something else I'd stay away they crack over time. 2. You want a air release vent. They don't eliminate air pockets but they help. 3. You want a vertical stuffer, they take up way less room. 4. You want something where not too much meat gets wasted at the bottom of the stuffer. I have seen some where you loose a pound of meat. Those are a couple factors I'd think about while shopping for a stuffer.

Can you precook this recipe by poaching them? Can you cure this without the eggs of course. Anyway beside I like to have sunny side ups fresh. Thanks for the recipe.

You could if you'd like to just crisp them up afterwards. Yup you could leave the eggs out if you wish. Glad you liked it though!

I use soy protein. There are a bunch of different kinds though. I have a video called how to make a sausage recipe that goes into detail though.

@@kristengingera294 You can get away without using binders and have the texture be the same. You will need to mix a lot and maybe leave it stuffed into casings in the fridge overnight. There are also more options for binders. Soy Proteins Whey Proteins De-heated mustard Carrageen

Super interesting in curing and smoking this. Seasoned and cured pork. Bacon eggs and cheese added last in a summer sausage style fiber case. Would be awesome to see you test this.
