Corn Dog Casserole Ingredients
1 lb. Lean Ground Beef
Non-Stick Cooking Spray
1 Medium Diced Sweet Onion
1 Tsp. Garlic Powder
1 Tsp. Onion Powder
½ Tsp. Salt
½ Tsp. Pepper
¼ Tsp. Red Pepper Flakes (optional)
1 Tsp. Chili Powder
2 Cans Rotel Tomato and Green Chilies
1 Can Mixed Chili Beans in Chili Sauce
1 Can Kidney Beans in Chili Sauce
2 Boxes Jiffy Corn Muffin Mix
2 Eggs
2/3 Cup Milk
5 Hot Dogs
1 ½ Cups Shredded Cheese
Sour Cream (optional)

I started making corndog muffins when my kids were little, now I make them for the granbrats. I dice the hotdogs and add them to the cornbread batter with some grated cheddar, when I make them for myself I add Jalapenos. they are great as they are or we break them up in chili. I recently made a casserole using the gbrats favorite frozen mini corndogs and hormel canned chili, another of their favorites and it was a big hit.. I like this idea but I think it would serve better and go further if the hot dogs were sliced and maybe browned before going in the casserole..

I would probably use all the hot dogs in the package & cut them in to bite size pieces. Then put a layer of cheese on the top, then spread as much corn bread mixture as I could to fit over the entire casserole pan & bake. When it's all ready to eat & you spoon it on to your plate, you'll have a bunch of bite sized pieces.

Jiffy Corn Muffin Mix is one of those childhood memory makers that I'm glad still exists. Remember Appian Way Pizza? And Betty Crocker Noodles Romanoff? I miss those 50s & 60s convenience foods. I think they should come back. They say you can't go home again but I don't believe 'em. Thanks for recipes that remind me that I'm not the only one who remembers the ol' days. 💞

My wife mixes chopped hot dogs into corn bread batter and bakes them into muffins. Now she need to figure out how to add chili. As always, looks great.

That's interesting--I know it might take away from the "corn dog" look, but it would be a little easier to serve and eat if you cut the hot dogs into bite sized pieces (especially with kids). Thanks for the recipe!
