► German Style Boiled Ham Recipe
1,5kg pork ham or butt
1l water
100g curing salt
⚠️ Curing salt is different all over the world. This is for German curing salt (Pökelsalz). Please research the right ratio in your region! ⚠️
20g sugar
1 tsp caraway seeds
1/2 tsp coriander seeds
1/2 tsp garlic powder
10 peppercorns, crushed
10 juniper berries, crushed
1 bay leaf

100g + 400g strong wheat flour
3,5g dried yeast (half packet)
2 Tbsp whole spelt flour
50g sourdough starter (optional)
350g water
12,5g salt

500g heavy cream (at least 32%, 40% is better)
1 tsp smoked salt
