Recipe:
2 1/4 cup rolled oats
2 cups flour
1 cup brown sugar
1/2 cup white sugar
1/2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
2 tsp cinnamon
2 eggs
2 sticks butter
2 tsp vanilla
Icing
1 1/2 cups powdered sugar
3 Tbsp milk
1 tsp vanilla
Directions:
In large bowl, with hand mixer, cream the butter, sugars, eggs, and vanilla
Add in flour, baking soda, baking powder, salt, cinnamon, mix in by hand
Add in oats and mix by hand
Line baking sheet with parchment paper, drop spoonful sized cookie dough onto paper. Press tops of cookies a little with back of spoon or fingers.
Bake cookies 350 for about 10 minutes, do not overbake.
For icing:
In bowl, whisk powdered sugar, milk and vanilla until smooth. Add 1 tbsp milk at a time for desired consistency. After cookies have cooled, use regular spoon and drizzle icing over cookies. Allow icing to set before placing cookies in tub with lid.
