Thanks for the recipe. If you layer the beets in between the eggs you can get 10 eggs in your jar with the same effect. Using the regular mouth jar itself prevents the eggs from floating up if you pack them properly plus the more eggs the less sour they are as they age. Hope that helps.

I made 3 dozen last week. I’m down to 8 eggs. I added three tlbs of picking spices. I been making pickled eggs for the better part of 50 years. These were the very best!!

Am I the only one thinking 🤔"holysh!t she's using beet juice with a white shirt" so brave. It's now the day after Easter 2022 and it's my official pickling eggs day and I'm going to use your recipe. It looks fantastic. (Boston)

My Mama picked her FAMOUS eggs ALWAYS at Easter after her grandchildren finished eating their eggs they hunted which not many was eaten lol but her Yellow was Pink also. She has passed and I have tried and tried to get the yellow pink but it is a fail each time. Does anyone know how to get the yellow pink also? Thank you for this recipe!! They look delicious.

My mom's (RIH) recipe is similar to this. My mom would layer the eggs and beets in a Deli Jar while the eggs were still warm, then poured the liquid mixture over the eggs while it's still warm. Placed lid on the jar loosely until liquid cooled, then tighten the lid completely and let them pickle for 2-3 days on the counter(the eggs won't spoil because of the vinegar)before eating. The yellow will be pink with this process and they'll be delicious!! Enjoy!! 😋

the longer they soak the more color they get. My aunt would make them a month ahead and they were the best! The yolk was always pink.

Can you hot water bath can these, for shelf stable storage ? I see people canning beets, and eggs separately, for shelf storage ....but not combined. Just wondering . Thanks for the video :) .

I do not waterbath can them. I only store them in the fridge for short term

Yes you can replace sugar with Splenda blend this is the granulated splenda the package has a cookie on it. I do this for my husband all the time and we did it with the pickled Amish mustard eggs which are delicious, as well.

Do NOT use Splenda. It disrupts the gut microbiome and has been shown to lead to weigh gain. You can use stevia safely and of course the beets are naturally sweet so why not try some without sugar?

I see you used 3 jars and added 6 eggs each and poured the juice of the two beet cans into one jar...Did you need 6 beet jars to do 3 jars equaling 18 eggs?

Doesn't make sense-The recipe was from a woman and she was famous for her pickled beets why would she be using canned beets that are not pickled to make these eggs? And beets and pickled beets are two different things.

@@steveandrews8301 "The pH level of a solution shows whether it is acidic, alkaline or neutral. Neutral means it is neither acidic nor alkaline. On a scale of 0 to 14, a pH level of 7 is neutral, a pH level lower than 7 means a solution is acidic, and a pH level greater than 7 means a solution is alkaline. Additionally, sugar tends not to release H or OH ions when it dissolves in water, so it does not alter the acidic or alkaline properties of the solution. In other words, sugar cannot materially alter the pH level of a solution, so the pH value of a sugar solution is the same as the pH level of the water without the added sugar. Adding sugar to liquids besides water, such as lemonade, fruit juice or tea, will make them taste sweeter, but this has nothing to do with the pH level. Adding sugar will not affect the pH level of the liquid because sugar simply does not have the chemical capacity to do this. This is an important distinction to make because many people think sugar is acidic."

But some people still say sugar has a net acidifying effect on the body, when consumed - the same way they say too much meat consumption causes an increase in one's body acidity levels. What we need to shoot for is eating more alkaline foods, such as high mineral content foods., eg., plants, etc. Sugar is empty calories and is also very inflammatory, as well, and I suspect contributes to heart disease and diabetes and cancer, as well. it's just not worth eating the stuff, health wise speaking, is what I was trying to convey.
