To make my vegan lobster roll, I use hearts of palm, chopped into small pieces and then mixed with vegan mayonnaise, diced celery, and a blend of spices to create a flavorful filling. The mixture is then served on a soft, toasted bun and garnished with fresh herbs.

Ingredients:
1 can of hearts of palm, drained and rinsed
2 tablespoon vegan butter
1/2 cup vegan mayonnaise
1 stalk of celery, finely diced
2 scallions, finely chopped optional
1/2 tablespoon lemon juice
1/4 teaspoon Old Bay seasoning
2 tablespoon Furikake Japanese seasoning or 1package of roasted seaweed
Salt and pepper, to taste
4 soft buns, toasted
Fresh herbs, such as dill or chives
Fresh Lettuce
