The END OF EGGS? | Egg White vs Vegan Cocktail Foamer!

In this video, we're comparing egg white vs a vegan cocktail foamer to see which is the best option for making cocktails!
We're using a plain old Egg White and putting it up against the Vegan Cocktail Foamer from Fee Foam to make two cocktails to compare them. Is there a clear winner? Let's find out!
To keep the process as fair as possible, I'm making two identical whiskey sour cocktails, with the only difference being that I'll make one whiskey sour with egg white, and I'll be making one whiskey sour without egg white!
Both methods work fine and produce great foam for cocktails, but I think the vegan cocktail foamer didn't have the creaminess of the egg white, so on balance, I think I prefer using egg white for a whiskey sour, but I can definitely see times where I would make cocktails with vegan cocktail foamers.

The visual difference is pretty pronounced but the effect is the same, which is great for a vegan.

Great explanation as what an egg white does beyond foam. I do have a foamer (not Fee Brothers) on the shelf to have when I want a foam and don't have egg whites.

MATT!!! This was so interesting!!! I often use Fees foamer vs egg whites. I've found that Fees sort of looks better, but has a slightly artificial taste to me!! I guess it depends on the cocktail, but Fees has it's place, but egg whites is the way to go!!!! Great video!!! CHEERS!!!!

I have the fee foam, I agree with @theSpiritofthecocktail. I find the fee foam has a chemical taste. I think it needs an excellent spirit to balance that taste. But it does well and is a nice alternative. It’s nice to just have on hand. Great comparison.

Yeah, the egg white definitely won, but hard to argue with it being shelf stable and easy to always have on hand. (although I've learned about powdered aquafaba recently which might be a good alternative)

Great comparison Matt! I have only used the egg white in this delicious cocktail and I enjoy that very much but I would definitely use the Fee Foam and especially so if I had someone over who is a vegan. This is a terrific demonstration! I like to be able to offer people choices when they have restrictions with food allergies (egg is a common food allergy - it is usually the protein in the egg that causes an allergic reaction) or for people are vegetarian/vegan! For myself I really prefer the foam and the consistency of the foam with the egg white but the alternative is impressive! So informative and super interesting Matt! Thanks so much! Happy Monday! Yeah, I definitely preferred the taste of the egg white, and I've also learned that egg white is slightly alkaline, which also neutralises some of the acid from the lemon juice, making a more balanced drink. Still, as you said, it's always good to have alternatives especially for friends with diatary restrictions!

I wish you did the fee foam slow and sped up the egg one as I think I'm having problems getting enough out doing the recommended dashes (no where near as foamy as yours). did you only do 2 dashes here? Also that was just one shake with ice, no dry shake? every other video i've watched has recommended dry shaking. Also thanks for doing the video- whiskey sour will be on our September cocktail of the month 🙂

I think I did three or four dashes. The Fee Foam can be tricky though, and I've found that when the bottle is full, the amount that comes out 'per dash' is smaller than the amount that comes out when the bottle is half empty, so play around a little bit to find your ideal amount. I only did one shake, as the size of my shaker and large ice cube allows me to whip up a nice foamy head without dry shaking, but if you're having trouble, a dry shake will definitely help! Hope that's useful to you!

Bought this brand a while back, and I did not like it at all. It has a very chemical taste to it, even when you use less than advised. Tried making an Espresso Martini as well, it was absolutely terrible. Just stick with Aquafaba, as it also gives a bit of the creaminess that an egg will give you! Great video btw!

The egg was definitely better than the artificial stuff. It was hidden quite well in a lime juice cocktail, but I can see how you might have tasted it in an espresso martini

Ah, the whole dry-shake, reverse-dry-shake debate! Maybe it's just the size of my ice rocks and width of the shaker tin, but I always get plenty of foam from just a plain wet shake. (in fact, in some videos, I end up with too much foam!) Sláinte
