*Custard cream ingredients for 6 donuts :
Egg yolks: 3 pcs
Sugar: 45 grams
Cake flour: 16 grams
Hot milk: 250 grams
Vanilla: 1/4 tsp
Dark chocolate: 30 grams
*Ingredients for 6 donuts :
Bread flour: 175 grams
Cake flour: 75 grams (or use multi-purpose flour instead of both)
Granulated sugar: 70 grams
Instant dry yeast dough: 6 grams
Salt: 6 grams
One egg + milk: 145 grams
Butter: 20 grams
*All raw ingredients for the dough should be at room temperature.
I added 30 grams of dark chocolate to 1/3 of custard cream to have a chocolate cream.
When the custard cream is on the heat, it must be constantly stirred with a whisk so that it does not stick to the dish, it thickens for 2-3 minutes.
I didn't add vanilla because my eggs were very fresh and didn't smell at all, but if you want to add it, remove it from the heat and add it at the end.( if you use vanilla bean, heat it with milk in a saucepan to release its aroma)
The dough rests 4 times.
First break: 45-60 minutes
Second break: 15-20 minutes
Third break: 45-60 minutes
Last one : 10 minutes without cellophane coating until it dries on the surface of the dough and the dough has a crispy surface.
