The Most Delicious Green Goddess Dressing Ever

Today we continue with our homemade favorite salad dressing week with a tried and true classic right out of the retro recipe box! Green Goddess salad dressing is rich and creamy and full of green herbs and tangy goodness. This version is made a little lighter by replacing the mayonnaise normally used in the recipe with avocado and the sour cream with non fat Greek yogurt then we are also using some non fat buttermilk in place of the heavy cream that the original recipe calls for.
This dressing is called "Green" because it is full of the herbs of your choice. In this case I am using parsley, green onion and tarragon but you can use whatever soft green herbs that you love best. This is great with basil, cilantro, dill, even spinach will work in here, make it work for you! Add in some lemon, a garlic clove, salt and pepper and don't forget a squeeze of anchovy paste! The original recipe calls for up to six filets of anchovy which are not fishy and they don't add a fishy flavory but a salty richness to the dressing, much in the way that fish sauce adds that certain something to many Asian dishes that when left out they simply do not taste the same. So be sure to add the anchovy paste. I highly recommend the past version because you can leave the tube in your fridge for a good long time without having to waste a can of unused anchovy in the fridge.
