5 lbs lean beef cut in cubes
3 tbsp ginger and garlic
1 tsp salt
1/2 tsp black pepper
Method:
In your instant pot, add the meat, the ginger and garlic, and black pepper, saute the meat until its not red, hit the meat stew button and make sure you seal the instant pot and let it cook for 30 minutes, after the 30 minutes, let it slow release for about 15 min, once you open the ip let it saute on high to make sure all mixture is completely dry. At this point you want to make sure that the meat is soft and shredding by just mixing it. Keep aside and if you like you can temper it, this process makes this meat stuffing delicious.
Ing to temper the mixture:
2 tbsp olive oil
1.5 tbsp fresh ginger and garlic
4 to 5 curry leaves
2 red dried chilli peppers (optional)
3 heaping tbsp tomato paste
2 tbsp sambal (if you can find it) Optional
1/2 tsp salt
1 tsp black pepper
1 tsp lemon pepper
1 tsp cajun seasoning
Method:
In a big sauce pan add the olive oil, once it's warm add the ginger and garlic and let it saute so it releases all the oils and flavors, next add curry leaves, chili peppers, and the tomato paste, let the tomato paste cook until it becomes a little dark, then add the sambal, if you can find it, if not leave it out, add the salt, pepper, lemon pepper and the cajun seasoning, lastly add the meat mixture and cook it for about two minutes. Make sure to cool the mixture before you put it in freezer bags.
This mixture can be used for just about anything.

Sambal has also been out of stock in Vancouver for quite some time.. i made some myself by soaking dried red chilis and dry garlic flakes overnight, draining and blending with some vinegar (in a food processor, not blender) then cook it in hot oil to make it shelf stable.. ideally it would be best done in a chhipad or khandñi to that its still a bit chunky with whole seeds... but seriously.. ain't nobody got time for dat!

So happy to see you again. You always have wonderful recipes and I would love to see the video on frying curry leaves. I live in northern Wisconsin and couple of hours away from twin cities, where do you get your curry leaves? I got lucky and nabbed 2 jars of chili garlic sauce. I used to get it from Cub foods, they always seem to have it. I'll give you one of my jars. Life isn't good unless you have chili garlic sauce.

You are too sweet! I did find some chili garlic sauce at the new empire store here in Mn. I usually get my curry leaves at the Indian store, there is one on Central Avenue and there is one in Plymouth as well 😊

I usually make sections, put it in a freezer safe bag, make sure there’s no air in it and freeze it until I need it, hope this helps☺️
