Since I was little I would help roll lumpia...best way I find to roll lumpia is to roll it diagonally as that gives you the widest flaps to fold. Instead of having a square facing you have it like a diamond shape. I fold bottom to the middle, then the left and the right in, then roll up. Also after frying I don't lay them down but standing up as that lets the excess oil drain and keep the lumpia crispier longer.
