My version: I fry the ground meat that is well seasoned with salt and pepper separately till no moisture and the meat is brown/semi crisp then set aside. Use the leftover oil from the ground pork frying for the annatto seeds... Fry it to get the color and aroma. Dispose seeds if color is achieved then use the oil to fry the garlic, onions and LAUREL(to get the flavor and aroma infused in the oil) then add carrots and fried ground meat. Add tomato paste, tomato sauce(just a little) and fish sauce to taste. I use pork or beef bouillon to add more flavor. Then simmer to finish cooking. I like my giniling on the dry side. Not to saucy or oily. I personally add raisins... (some people don't like raisins hahaha)
I think tomato paste can help enhance the tomato flavor of giniling. You will need to saute the tomato paste first before adding tomato sauce. It is more flavorful, and also cheaper compared to buying more tomato sauce. Yes, we do interchange spaghetti sauce and tomato sauce sometimes if we cook either spaghetti or giniling, especially if we feel that we just need to use what we have instead of buying more sauce. This video resembles the format of the last video you tried cooking Filipino food. Its nostalgic.
I simply think of giniling as ground meat…could be ground pork or ground beef. A good mix would be a 1:1 mixture of beef and pork. It’s a very versatile ingredient for a lot of dishes.
My special pork giniling version, i put garlic, onion, tomatoes, potatoes, carrots, green peas, green & red bell pepper, raisins, tomato sauce and boiled egg. Add just a little bit of sugar but should not too sweet, just to balance the sourness of the tomatoe sauce.
The difference from basic spaghetti i think because giniling has fish sauce/soy sauce, potatoes, bell peppers, boiled quail/chicken eggs, sometimes green peas. You can also use tomato paste instead for a deeper flavor. Oh, and the bay leaves!
In our house, my mom does not use spaghetti sauce with giniling. It's my first time to see a recipe with spaghetti sauce. She just adds a bit of soy sauce to taste. However, I like eating the giniling with banana ketchup on the side, so I guess that would taste a bit similar to how you cooked it. And of course, quail eggs are best with giniling, and lots of rice 😄
You could also try adding diced sweet potatoes to your giniling. I remember a classmate of mine brought her giniling "baon" in school, and it had sweet potatoes and carrots, instead of potatoes and carrots, and it tasted so good!! You could try it, as Korea has lots of sweet potatoes all year round.
Mr. Bulbul, have you tried Ginataang halo-halo? If not yet, hope you can cook that too. It's a good snack for a cold or rainy weather. Mostly cooked in the province because it's filling and almost all the ingredients can be found at a typical Filipino province's backyard. It's kinda sweet but you can cook it milder too. 💕
Next time, start with meat and a little water. Let it boil, remove impurities, add small amount of soju to remove the lansa, and let fry on its own oil. Make a hole in the center and add garlic. Fry for a bit, then onion. Then you can add the vegetables, seasonings/spices. The same goes for every ginisa with meat. We fry the meat a big to get that smoky flavor and to have the meat firm up before adding the sauce.
ive been cookoing giniling my whole life never thought of putting it on top of noodles, its a must try!!! thakns for the idea, i can say thay you will progress and get rich if you open up a filipino-koream resto..
If you start with onion, celery and carrot then brown the meat and put red wine and let it evaporate, put some tomato sauce, and stock, it will be bolognese...
We dont put spaghetti sauce though...we use soy sauce instead.then we add sitaw and kalabasa instead of carrots and potatoes...and we also use it as a filling on lumpia.
I don't know if it's only me, I normally eat pasta sauce (Spaghetti or Carbonara) with rice especially if I'm being lazy in preparing the pasta. Also, Mr. BulBul, I love what you said @9:06-9:18 Thank you sooooo much for this video.
