One civ that can pull off a deer heist easily are the Rus. You build 2 cabins and train the scouts while you age up and as soon as you are feudal you get pro scouts. With the scouts in position, as soon as the tech is done you grab the deer and run.

I simply can understand how a Byz player can make production and the GH tower not on a cistern. That would be like a HRE player picking up relics and just placing them down on the ground next to their base and not in a tower or keep.
