老實說,日本人的堅持心是真的很好,由其在於對食物方面更加可以感覺得到那份發自內心的堅持,他們不論在選用的原料上,煮食手法,用心,出品賣相等等都是十分明顯,也不會因為原料漲價而轉用次級的食材,他們對味道的堅持,日本人真的比其他國家優勝很多,在亞洲之中,會令我懷念當地美食的地方,為首的就是日本了,其次就是南韓,之後就是台灣了,可惜現在因為疫情關係而沒法再去享受那些令人懷念的食物了😢希望在新的一年疫情可以快點過去,讓全世界的人可以重新回到正軌吧~ 祝大家身體健康~虎虎生威~

wow, this ojisan's attention to detail is on a different level comparing to most of the other shops. Everything is kept so spotlessly clean as well even after so many years of use. He's a real master this one.

Goodness, he's probably the first chef who offered this channel owner a cup of coffee AND even served him the first order of the day while making sure the chewiness level of the noodle fit his taste. 仕込みから調理、配膳まで一人でこなし調理場は綺麗だし、見ていて気持ちが良い位にスムーズで無駄の無い動き・・ それもこのお年でww  出てくる料理も美味しそうで、お値段もお手頃だし近所に有るなら通うレベルと思います 本当の職人さんですよね尊敬します

As a former chef, I appreciate the precision of his timing - having all the separate dishes ready at the same time so nothing gets cold even though he doesn't use a heater.

What does the word Chef mean to you?

@@eyeofsauron7662 One who not only cooks, but develops the menu and recipes, manages food and labor costs of the kitchen, and most importantly develops and trains the line and prep cooks as part of managing the kitchen. Depending on the restaurant, the responsibilities can extend to the front of the house as well. What is your definition? As an FYI, I attended both Culinary Institute of America in Hyde Park, NY and Johnson and Wales in Providence, RI. I have been a Chef at various restaurants around New England from an English Tea Room to American Bistros to classic French restaurants.

@@4twenny I already knew fine cooking before entering culinary school, but when I decided to switch from banking, I knew that without the formal education, I would start from the bottom regardless of how much I knew. Professional cooking entails FAR more than just knowing the difference between Kosher and table salt. Graduating with a 4.0 GPA helped immensely. I don't think there is enough space allowed in comments to go over everything. What I would recommend is to ask various chefs in the market you're looking to work what qualities/qualifications they look for. I can also say that the pay is good - especially at the top tier - but the hours are LONG. It's a HIGH burnout industry, and you essentially will have no social life outside of the restaurant world.

奈良県のお店でしたので行ってきました。 と言うのも、よく通る道沿いで気になってはいたものの、外からは様子が伺えず躊躇していましたので動画でよく知ることができて有り難かったです。 出汁のよく効いたうどんでとても満足しました。店の横の駐車場は先入先出が難しく、店主自ら誘導。 店の中も外も元気な店主で驚きました。また行きたいですね。

My Mom was pure Japanese and taught me how to make fried rice and many other traditional dishes. She was famous for these dishes, everyone wanted to eat at our house! I am currently trying to learn how to make the soup bases for ramen and udon dishes. I remember making noodles with my Mom, but not the broth. I've made what I call "loaded ramen" and "loaded Udon", but want to make the broth from scratch. Watching these videos helps me out a lot. Thanks for sharing them.
