In this episode of The Meat Show, host Nick Solares continues on his mission to sample all of London’s most notable meats. The next stop is a visit to Pitt Cue Co. to try what Nick Solares calls “one of the great pork chops in the world.”
Pitt Cue Co. is all about pigs. When co-owners Jamie Berger and Tom Adams got started, Pitt Cue Co. was just a seasonal food stand serving pulled pork sandwiches. Over the years, it has evolved into a small restaurant in Soho that’s defining the course of British barbecue. The meat is supplied by a farm in Cornwall run by Adams.

Nick really got better over time. Everything from his clothes, his glasses, talking over the chef and down to his vocabulary. I enjoyed watching his videos and always go back to watch them. Eater should bring him back. He had a difficult past but he shouldn't be defined by it.

I’ve sometimes thought the same, but I wonder how the whole oeuvre of worshiping expensive cuts of meat comes off two years into a global pandemic and after so much clear data is out now about how beef production in particular plays a huge role in climate change. Honestly I think it would just hit a whole series of sour notes regardless of how well Nick might host it.

I used to find the jokes funny about the vocabulary Nick uses, but by now it's kinda clear- i'd rather he come across as pretentious because he's using words that accurately describe the food than he come out with some basic video that sounds generic. The reason I subscribed was because of the meat show and how well the experience of the food was articulated. I can't even begin to grasp how tired i had become of really boring, carbon copy and generic food reviews who were actually pretentious or misused words. Good on you nick. Thank's for exposing me to new words.

Disclaimer: I'm not mother tongue English speaker. I personally don't find amusing his speeches, I know (most of) the words that he is using, and I don't find difficult to understand what he is saying at all, I just find it pretentious. I have the impression that he uses this language to mask the fact that he knows no more than me about food and meat. Said that, he likes to eat meat and gets paid for it, good for him (blood fat excluded).

You need to make two pilgrimages, one to Wilson North Carolina (Johnson County) for the pork and north of San Antonio to the New Brunfels area for the sausages and brisket. THAT is BBQ. The jerks in Austin have no clue, compared to the Germans who migrated to that bit of Texas Highlands. Rare pork makes me want to hurl.

Malt-fed animals are the best. Chicken eggs get enormous when you feed barley to the hens. The only problem is if you do that to cattle, they start rejecting any other type of food, and if your supply ends they starve themselves to death. So you have to make sure you'll have an eternal and steady supply of malt before staring to give it to steers.

@brakjart well I’m glad to inform you Texas BBQ is beef centric and normally uses dry rubs or just salt and pepper. Glazes and sauces are home to the Carolinas, Kansas City, or Memphis.

When he’s around British people, he sounds extremely American. Usually he has enough of a tone in these videos that when he’s speaking alongside Americans, it’s pretty clear he’s still got some of a British tone, yet when he’s alongside the British as they’re speaking, it’s even more clear that the New York accent and tone have seeped in and pushed out a lot of the British 👍

Went to this restaurant yesterday. Have got to say that I was underwhelmed. Sadly the pork chop and the ribs is not something they have on their regular menu. Did try their prime rib which was good but nothing special. Truly the best things there were a couple of their starters and the bone marrow mash.

I tried to order the same pork chop, unfortunately it wasn't on the menu either. Restaurant isn't with us anymore last time I checked, the best incarnation of the place was in the back of soho somewhere in the early days.

British Barbecue seem to be different than what most American would consider BBQ, it's more like Santa Maria BBQ ie grilled meats.
