It is blueberry season! There are so many delicious things to do with fresh blueberries, and I have probably done them all this season, but one of my favorites is this......Blueberry Jam! I prefer to use Pomona's Universal Pectin for my jams and jellies because you can use way less sugar. The reason you can use less sugar with Pomona's Universal Pectin is that calcium is what activates the pectin, not sugar, so you don't need as much. In fact, you can use honey, maple syrup, stevia, any other healthy sweetener in this jam! I want to use less sugar, but I don't want the chemicals that are in the standard "low sugar" pectin you get from the grocery store. I have used Pomona's Universal Pectin for many years with great success. Use those blueberries for delicious jam, pancake syrup, pie fillings, and more. I love when blueberry season comes because they are plentiful and much cheaper, so I always stock up. Before the season is over, get yourself some fresh blueberries and make this delicious blueberry jam....you won't be disappointed! THE AMOUNT OF SUGAR IN THE RECIPE IS ONE (1) CUP.
