🔥 Ingredients:
4 salmon fillets (About 2 Lb)🐟
1 Small Onion, diced
1 can of coconut milk (13.5 oz) 🥥
3 T curry powder 🌶️: amzn.to/45zBM65
2 T butter
2 T minced ginger
2 T Tomato Paste
1-2 T Olive Oil
1 T Garam Masala
1 T minced garlic 🧄
Salt and pepper to taste 🧂
Optional Ingredients: Chipotle Cilantro Lime Rice
Fresh cilantro for garnish 🌿
🍴 Instructions:
Preheat Oven to 350. Salt and pepper Salmon, top with pieces of butter, and put on a parchment paper lined baking sheet. Bake for 12 minutes or until slightly flaky.
While the salmon is cooking, add Olive Oil to pan over medium heat, dice onion and add to the pan. Cook onions for a couple minutes as desired. Add Garlic and Ginger to the onions and stir. Add in Curry Powder and Garam Masala and stir until dry. Add in tomato paste and fry for a minute or 2. Add in coconut milk and stir until it's the color on the video, or thickened and simmering. Remove salmon from oven when done and put in pan. Spoon the curry over the top and serve over Cilantro Lime Cauliflower Rice, if desired. Enjoy!
