You should add to your shopping list a pressure cooker. In Portugal we use a similar recipe for our feijoada. And we spare time and cook the meat tender. I lv African food, English food I just think that both cultures use to much oil! I hv cooked fee dishes from both cultures and used less oil and the results was beautiful and people loved it. Oil is use just to cook or flavour the food. You can result and the achievement is perfect. Becouse chemically oil can enable the taste of the others ingredients.
